The Laundry is seeking a Commis Chef Apprentice to join their vibrant neighbourhood restaurant in Brixton. This apprenticeship focuses on the craft of classic bistro food, with an emphasis on preparing and cooking fresh, locally-sourced ingredients across all service cycles, from breakfast to Sunday Roasts. You will gain hands-on experience and learn alongside professional chefs.

Requirements

  • GCSE or equivalent in English (grade 9) is desirable. Relevant qualifications and industry experience can be considered for adjustment of the apprenticeship.
  • Must be able to be on your feet all day in a fast-paced environment, including early starts and late finishes.
  • Flexibility is essential.
  • Ability to maintain meticulous cleanliness and organization at all times.

Responsibilities

  • Preparation and cooking of entirely fresh, site-sourced ingredients.
  • Developing essential preparation skills and learning the artistry of cooking on a section during live service.
  • Technical handling of meat, fish, poultry, and seasonal vegetables.
  • Building a professional foundation in kitchen hygiene, safety, and organisation.
  • Delivering high-standard menus that celebrate quality.
  • Undertaking stock control, storage, and rotation.
  • Applying food safety and allergen procedures.
  • Maintaining a safe and clean work environment, including personal hygiene, PPE, and uniform.
  • Communicating with colleagues, managers, and stakeholders in a professional manner.
  • Working as part of a team to support service delivery.
  • Using feedback to improve own performance.
  • Managing own time to ensure tasks are completed.
