About AKI

AKI is a contemporary and stylish Japanese restaurant and lounge bar, originating in the vibrant capital of Malta, Valletta. Known for its modern take on authentic Japanese cuisine, AKI offers a unique dining experience with a refined menu featuring sushi, robata grill dishes, and signature cocktails, all within an elegant and sophisticated ambiance.

Building on its success and reputation in Malta, AKI is now expanding its reach and is set to open a new location in London, bringing its distinctive Japanese culinary experience to a new international audience. This marks an exciting step for AKI as it ventures outside of Malta for the first time.

Job Role

  • Lead the daily operations of your kitchen section, ensuring consistent, high-quality food preparation and presentation.
  • Mentor and guide Commis Chefs to maintain quality standards and adherence to recipes.
  • Prepare dishes according to established recipes and menu specifications.
  • Manage inventory, order supplies, and ensure proper storage and handling of ingredients.
  • Maintain cleanliness and organization of your section, adhering to all health and safety regulations.
  • Collaborate closely with other kitchen sections and front-of-house staff to ensure efficient service and communication.
  • Monitor food costs, control portions, and minimize waste to meet budgetary targets.
  • Conduct regular quality checks to ensure every dish meets standards before service.
  • Oversee shift operations, coordinate tasks, and manage workflow during busy periods.

Job Requirements

  • Minimum 2 years of experience in a similar role within a busy kitchen environment.
  • Strong skills in food preparation, recipe adherence, and presentation.
  • Ability to mentor and lead junior chefs to maintain high standards.
  • Good organizational skills for managing inventory and stock.
  • Knowledge of health & safety regulations and commitment to cleanliness.
  • Excellent teamwork and communication with kitchen and front-of-house staff.
  • Focus on controlling food costs and minimizing waste.
  • Ability to work efficiently during busy service periods.
  • Flexible availability to work shifts including weekends and holidays.
