About the Role

Our small independent bakery run by our master baker with over 30 years experience is looking for an enthusiastic apprentice. We bake everything in house so all bases will be covered from cakes to sourdough and everything in between. Our busy bakery is full of creative new ideas while also honouring the more traditional bakery items.

Role Details

Most of your apprenticeship is spent working. You’ll learn on the job by getting hands-on experience.

This apprenticeship offers an exciting opportunity to learn all aspects of professional bakery production within an independent business. You will gain hands-on experience creating a variety of baked goods while developing a strong understanding of how a successful bakery operates. From producing artisan breads and laminated pastries to decorating cakes and creating new product ideas, this role provides comprehensive training across a wide range of bakery skills.

Working alongside experienced bakers, you will learn the full production process, maintain high standards of quality and food safety, and contribute to the daily running of both the bakery and restaurant breakfast service. As part of a small independent business, you will also gain valuable insight into stock management, ordering, merchandising, and the commercial aspects of running a bakery.

What You Will Learn

  • Bread making, dough preparation, folding, shaping and baking

  • Pastry lamination for products such as croissants and Danish pastries
  • Doughnut production and frying methods
  • Product development and creating new bakery ideas
  • Preparation and baking of breakfast items for restaurant service

  • Stock rotation, organisation and waste reduction
  • Ingredient ordering and inventory management
  • Food safety, hygiene and quality control procedures
  • The day-to-day operation of an independent bakery business

Course Contents

  • Select, prepare/set-up and use equipment and machinery.
  • Clean and check tools and equipment.
  • Monitor materials/stock levels and controls for example, first in first out, temperature and environment.
  • Receive and store materials/stock from external suppliers and/or internal stores.
  • Store finished goods.
  • Package and label bakery products for example, allergens.
  • Comply with health & safety, food safety, environmental procedures, PPE, hygiene and method statements.
  • Clean and tidy work area. Dispose of waste and recycle.
  • Communicate verbally for example, with colleagues, suppliers and customers.
  • Record information - paper based or electronic.
  • Identify bakery product problems/faults and underlying causes.
  • Read and interpret information for example, specification, recipe and production plan.
  • Plan bakery tasks. Prepare for bakery tasks. Obtain materials.
  • Prepare ingredients.
  • Weigh or check weight of ingredients/products.
  • Mix ingredients.
  • Deposit, scale or cut/divide mixture.
  • Mould products.
  • Monitor prove.
  • Pre-bake and/or post-bake dressing of product.
  • Operate ovens.
  • Craft baker. Scale up/down a recipe using percentages.
  • Craft baker. Prepare and apply fillings/coatings.
  • Plant baker. Follow product changeover procedures.
  • Plant baker. Check product specifications throughout the key process steps; identify and rectify or report production issues.
  • Retail baker. Serve customers for example, determine customer’s needs, provide information, offer options and match bakery products to customers’ needs. Sell to customers for example, promote complementary items, promotional offers or seasonal products.
  • Retail baker. Display and replenish bakery products.
  • Select, prepare/set-up and use equipment and machinery.

Desirable Qualifications

  • English (grade 4/C or above or equivalent)
  • Maths (grade 4/C or above or equivalent)

Share if you have other relevant qualifications and industry experience. The apprenticeship can be adjusted to reflect what you already know.

As the role involves shift work, it is important that you have a reliable means of travelling to and from the workplace, as public transport may not always be available. On occasions, you will be required to travel to Glastonbury for training, so please ensure you will be able to get there. This will be between the hours of 9am-5pm. Please only apply if you are prepared to undertake early starts.
