Wage: £17,160 a year
Minimum wage rates (opens in new tab): £11 hourly
Wage may increase with performance reviews. It will increase after 12 months to the minimum wage for your age.
Training
Course: Baker (level 2)
Hours: Monday to Friday - shifts between 11pm - 10am. 30 hours a week
Start date: Monday 9 November 2026
Duration: 1 year 6 months

Course contents:
- Select, prepare/set-up and use equipment and machinery.
- Clean and check tools and equipment.
- Monitor materials/stock levels and controls.
- Receive and store materials/stock.
- Store finished goods.
- Package and label bakery products.
- Comply with health & safety, food safety, environmental procedures.
- Clean and tidy work area.
- Dispose of waste and recycle.
- Communicate verbally.
- Record information.
- Identify bakery product problems/faults and underlying causes.
- Read and interpret information.
- Plan bakery tasks.
- Prepare for bakery tasks.
- Obtain materials.
- Prepare ingredients.
- Weigh or check weight of ingredients/products.
- Mix ingredients.
- Deposit, scale or cut/divide mixture.
- Mould products.
- Monitor prove.
- Pre-bake and/or post-bake dressing of product.
- Operate ovens.
- Craft baker. Scale up/down a recipe using percentages.
- Craft baker. Prepare and apply fillings/coatings.
- Plant baker. Follow product changeover procedures.
- Plant baker. Check product specifications throughout the key process steps; identify and rectify or report production issues.
- Retail baker. Serve customers.
- Sell to customers.
- Retail baker. Display and replenish bakery products.

Work
Most of your apprenticeship is spent working. You’ll learn on the job by getting hands-on experience.
What you'll do at work:
- Prepare doughs
- Assist in weighing, mixing, and kneading doughs for breads, pastries, and other baked goods following set recipes
- Operate bakery equipment
- Use mixers, ovens, proofers, and other machinery safely under supervision
- Monitor baking processes
- Check timings, temperatures, and product quality throughout production
- Follow food safety standards
- Maintain strict hygiene, allergen control, and cleaning routines in line with regulations
- Assist with product finishing
- Support glazing, decorating, slicing, and packaging baked items
- Maintain a clean workspace
- Keep preparation areas, tools, and equipment clean and sanitised
- Support stock control
- Help check deliveries, rotate stock, and store ingredients correctly
- Follow production schedules
- Work to daily plans to ensure products are ready on time
- Assist with customer orders
- Help prepare items for retail counters, wholesale orders, or special requests
- Learn core baking techniques
- Develop skills in fermentation, shaping, proving, and baking as part of the apprenticeship standard
- Work as part of a team
- Communicate effectively with bakers, supervisors, and colleagues to maintain smooth production

Desirable qualifications:
- GCSE in: English (grade 4/C and above)
- GCSE in: Maths (grade 4/C and above)

About this employer
North's Bakery is an independent bakery, with both the main production and shop based at 10 North Street, Winchombe. The bakery was first established by Mr Ron North in Gwent, Wales in 1955. In 1967 Mr Ray North (eldest of the four sons, whom are all bakers around the country) and his wife Anita branched away to open their own business in the Cotswolds. The bakery is owned by Dan Seagrave who has been a baker at North's for over 30 years, along with his wife Roxanne. North's still uses all the traditional methods and produces products from only the best ingredients, made by qualified craftsmen.
