AI Engineer

Location: Hybrid - London
Package: Negotiable + Benefits

We're looking for an AI Engineer who is excited by the challenge of taking cutting-edge AI technology and turning it into robust, production-ready solutions that deliver real business impact. This is an engineering-first role where you'll design, build, and scale AI applications from the ground up. You'll work with Large Language Models (LLMs), modern cloud infrastructure, and distributed systems to create intelligent products that improve how thousands of users interact with data, documents, and business processes.

You'll have the opportunity to solve complex engineering problems, experiment with emerging AI technologies, and deploy solutions into production within one of Europe's largest insurance groups.

What you'll be doing

  • Designing and building AI-powered applications, including copilots, intelligent document processing solutions, and conversational AI platforms
  • Developing and deploying LLM-powered services and agentic workflows that solve real business challenges
  • Building Retrieval-Augmented Generation (RAG) systems using structured and unstructured enterprise data
  • Creating scalable, resilient cloud-native solutions using Google Cloud Platform (GCP), Vertex AI, BigQuery, and Cloud Run
  • Engineering secure APIs, integrations, and backend services that connect AI capabilities with existing business systems
  • Optimising AI performance, reliability, scalability, and cost efficiency in production environments
  • Collaborating with engineers, architects, and business stakeholders to take ideas from proof of concept to enterprise-scale deployment

Reasons to use Rodeo

I’m in my final year doing Economics and I don’t know whether to apply for grad schemes now or do a masters first. What do you think?

Honest answer — it depends on where you want to end up. A lot of top grad schemes (Big 4, civil service, banking) don’t need a masters. Let’s look at the ones you’d be competitive for now, and we can decide if a masters actually adds anything.

Also worth knowing: most autumn 2026 applications are open now. Timing matters more than you think.

Start with a chat, not a search bar

Grad scheme, placement, apprenticeship? Not sure what you want yet — that's fine. Your agent talks it through with you and turns "I have no idea" into a shortlist.
