AI Engineer

Location: London (2 days per week onsite)
Contract: Initial 6 Month Contract - Outside IR35

Overview

We're supporting a specialist AI consultancy delivering a large-scale AI transformation programme for a leading insurance organisation. They're looking for an experienced AI Engineer to design, build and deploy production-ready AI solutions using Large Language Models (LLMs).

Working alongside the consultancy and end client, you'll develop AI agents and intelligent applications to automate employee onboarding, enhance claims and underwriting processes, improve customer support, and streamline internal operations.

This is a hands-on role focused on building scalable, production-grade AI solutions that deliver real business impact.

Responsibilities

  • Design, build and deploy enterprise-grade AI applications using modern LLMs.
  • Develop AI agents to automate employee onboarding, reducing manual effort and significantly improving the speed and consistency of the onboarding process.
  • Build internal AI assistants that enable employees to quickly access policies, procedures and business knowledge.
  • Deliver AI-powered solutions to support claims handling, including document summarisation, information extraction and intelligent case routing.
  • Develop underwriting support tools to help analyse documentation, surface relevant information and assist decision making.
  • Build customer service assistants capable of answering policy questions and supporting contact centre teams.
  • Develop Retrieval Augmented Generation (RAG) solutions using enterprise knowledge bases and vector databases.
  • Build secure APIs and backend services that integrate AI capabilities into existing platforms.
  • Implement monitoring, observability and evaluation frameworks to ensure AI systems remain accurate, reliable and cost effective.
  • Optimise prompts, model selection and orchestration to balance quality, latency and cost.
  • Work closely with stakeholders to identify further opportunities where AI can streamline business processes and improve customer outcomes.
  • Ensure all AI solutions are delivered in line with security, governance and responsible AI best practices.

Reasons to use Rodeo

I’m in my final year doing Economics and I don’t know whether to apply for grad schemes now or do a masters first. What do you think?

Honest answer — it depends on where you want to end up. A lot of top grad schemes (Big 4, civil service, banking) don’t need a masters. Let’s look at the ones you’d be competitive for now, and we can decide if a masters actually adds anything.

Also worth knowing: most autumn 2026 applications are open now. Timing matters more than you think.

Start with a chat, not a search bar

Grad scheme, placement, apprenticeship? Not sure what you want yet — that's fine. Your agent talks it through with you and turns "I have no idea" into a shortlist.
