Assistant Bar Manager — Mayfair, Bar & Lounge

£48,000

Tucked away behind a discreet entrance in the heart of Mayfair, this is one of London's most talked-about destinations for fire-led cooking, exceptional cocktails and after-dark energy. A modern steakhouse, bar and lounge concept with a strong international pedigree, the venue pairs prime cuts and refined seafood with a high-end bar program built around inventive cocktails and an outstanding wine list.

By day it's a destination for elevated lunches and business dining; by night, curated music and DJ sets transform the space into a stylish late-night lounge that draws guests in to stay, connect and celebrate. It's a fast-paced, design-led environment where hospitality is treated as an art form — and the team behind the bar is central to that reputation.

Assistant Bar Manager Role

We're looking for an experienced Assistant Bar Manager to support the Bar Manager in running a high-volume, high-profile bar operation to the very highest standard. This is a brilliant opportunity for a driven hospitality professional who wants to develop into bar leadership at one of the capital's most prestigious venues.

Assistant Bar Manager Key Responsibilities

  • Support the Bar Manager in the day-to-day running of the bar, including staffing, stock control, and service standards
  • Lead by example on the floor during busy lunch, dinner, and late-night sessions
  • Train, motivate, and develop bar team members, embedding a culture of excellence and hospitality
  • Assist with cocktail menu development and maintain consistency across the drinks offering
  • Manage stock takes, ordering, and supplier relationships to control costs and minimize wastage
  • Ensure full compliance with licensing, health & safety, and allergen regulations
  • Deputise for the Bar Manager in their absence, taking ownership of rotas, briefings, and shift management
  • Build strong working relationships with the wider front-of-house and management team

Assistant Bar Manager

  • Proven experience as an Assistant Bar Manager or senior bartender ready to step up, ideally within a high-end, high-volume restaurant, bar, or hotel environment
  • Strong cocktail knowledge and a genuine passion for mixology and guest experience
  • A natural leader with excellent people-management and training skills
  • Highly organized, with solid stock control and cost management experience
  • A polished, professional manner with the confidence to engage with a discerning clientele
  • Flexibility to work evenings, weekends, and late nights as required
  • A comprehensive understanding of licensing law and health & safety compliance
