Caldesi in Marylebone is a fine dining Italian restaurant located in a leafy lane in Marylebone, inspired by the owners’ rural upbringing in Tuscany. Role Description
The Assistant General Manager is a full-time, on-site role based in London, responsible for supporting the General Manager in overseeing day-to-day restaurant operations. This includes:
- Leading and motivating front-of-house teams
- Ensuring exceptional guest experiences
- Managing reservations and service flow
- Maintaining high standards of food quality and presentation
- Coordinating staff schedules
- Supporting training and performance
- Monitoring stock and working with the kitchen on menu execution
- Ensuring compliance with health, safety, and hygiene regulations

This position requires a hands-on presence on the floor and close collaboration with the General Manager, owners, and kitchen team.
Qualifications
- Experience in restaurant or hospitality management, with the ability to supervise front-of-house teams and support smooth service.
- Strong guest service and interpersonal skills, with a focus on building relationships and delivering a welcoming, professional experience.
- Solid organizational and time-management abilities, including scheduling, coordinating shifts, and overseeing daily operations.
- Knowledge of food safety, hygiene standards, and basic health and safety regulations relevant to restaurant operations.
- Comfort with basic financial tasks such as cash handling, monitoring sales, and supporting cost control.
- Ability to train, coach, and motivate team members, fostering a positive, inclusive, and performance-oriented environment.
- Experience in fine dining or premium hospitality, ideally with an interest in Italian cuisine and seasonal, sustainable ingredients.
- Flexibility to work evenings, weekends, and holidays as required in a busy restaurant setting.
- Professional communication skills in English; additional languages are an advantage.
- Previous Assistant Manager or supervisory experience in hospitality is preferred; formal hospitality or management training is beneficial.
