Job title: Assistant General Manager
Location: Blackstock Road (opening in November)
Contract: Full Time, 40h/week
Salary: 38K per year
Who we are?
Founded in 2014, The Dusty Knuckle began by baking a handful of loaves from a shipping container in a Dalston car park. It has since grown into a permanent café and wholesale bakery supplying some of London’s best food businesses, alongside a milk float, the permanent van in Highbury Fields, and a café-pizza restaurant in Haringey. TDK is on an ambitious trajectory to scale its social impact and operations at new sites in the coming years with a new café opening on Blackstock road in November.
Awarded Time Out’s Best Bakery in London and a King’s Enterprise Award in 2025, The Dusty Knuckle is about more than great food. TDK is dedicated to impactful social change, running a youth training program that mentors and supports at-risk youth, including those with past offending histories, to develop skills and confidence for productive lives. Why apply for this role?
This is the perfect role for someone who has been working as a front of house supervisor and wants to take the next step into management, with real responsibility for a site and its team. Blackstock Road is a brand-new TDK site; you will help shape it from day one, setting the culture and the standards while learning the commercial side of running a business.
What will you be doing?
Cafe operations
- You will be responsible for the day to day running of the café, and delivering excellent customer service, including dealing with customer queries and complaints.
- You will lead shifts to ensure the cafe runs smoothly and consistently, all the spaces are clean and organised, and any issues during service are resolved efficiently.
Team Leadership
- You will know how to set clear expectations on team responsibilities. You will lead by example, motivate and support the cafe team, while creating a positive and respectful working environment.
- You will support the GM with recruitment, onboarding and staff development and won’t be afraid to provide regular and honest feedback to staff.
People & Performance
- You will assist with rota planning, monitoring staff attendance, punctuality and performance
- You will support staff meetings, training sessions, and one-on-ones when needed
- You will ensure there is clear and consistent communication between shifts and departments

Food, Coffee & Product Standards
- You will maintain consistently high standards across all sections, ensuring products are presented correctly, and with correct health and safety information
- You will work closely with the bakery and kitchen team to ensure products are available throughout the service
- You will ensure staff are knowledgeable about the products and can confidently answer customer questions
Commercial & Financial Responsibilities
- You will support the GM in driving sales and achieving financial targets
- You will monitor daily sales and service performance
- You will support stock ordering while monitoring wastage and stock levels
- You’ll ensure correct cash handling and till procedures
We are looking for someone who:
- Wants to build a career in hospitality
- Isn’t afraid of giving and receiving honest, constructive feedback
- Is reliable, respectful, and supportive and who gets the best out of people and knows how to make a team work well together, effectively
- Leads by example: someone who role models our values rather than just asking the team to follow them
- Has a good knowledge and experience of applying HR protocols and processes
