Bar Manager

The Dog & Fox is an iconic pub and hotel in the heart of Wimbledon Village. We are an established events venue, pub, dining serving a premium collection of draught & craft beers, local London spirits and fine wines. We offer the best in seasonal, fresh, British produce for our menu and have 25 exquisite bedrooms above in our boutique hotel. Just a 10-minute walk from Wimbledon train station and on several bus routes we are easy to reach and busy all year long. With Wimbledon Tennis Championships in the summer and Christmas functions throughout the winter there is never a boring moment at the Dog & Fox Hotel! Nearest public transport – Wimbledon Train Station or 93 Bus.

We’re looking for a Bar Manager who knows their Negroni from their Negroni-with-too-much-vermouth.

The Dog & Fox is looking for a brilliant Bar Manager to take the reins of our bar operation.

We’re a busy, high-energy pub in the heart of Wimbledon Village. We like great drinks, great service and a bar that looks like someone actually cares about it.

What you’ll be doing

  • Own the drinks offering: Develop and maintain an exciting cocktail menu, keeping things fresh, seasonal and commercially sensible. We want someone who can create drinks people actually want to order — not just cocktails that look good on Instagram.
  • Keep the beer flowing: Take responsibility for beer line cleaning, cellar standards and all the unglamorous stuff that keeps the pints tasting exactly as they should.
  • Keep it spotless: The bar, cellar, fridges, glassware and equipment should be immaculate. You’ll set the standard and make sure the team sticks to it.
  • Lead the team: Manage, motivate and develop the bar team. You’ll be expected to lead from the front, coach people properly and create a team that takes pride in what they do.
  • Own stock & ordering: Take responsibility for bar stock, ordering, deliveries, stock rotation, wastage and keeping an eye on the numbers. We like a healthy GP almost as much as we like a perfectly poured pint.
  • ⚡ Run a great service: This is a busy pub, so you’ll need to be comfortable when the bar is three deep, the tickets are flying and someone has just asked for twelve Espresso Martinis. You’ll keep your head, support your team and make sure guests still get a brilliant experience.

What we’re looking for

We’re looking for someone who:

  • Has previous experience running a busy bar or leading a bar team
  • Knows their cocktails, spirits, wine and beer
  • Has a genuine interest in drinks and enjoys developing new ideas
  • Understands cellar management and beer line cleaning
  • Is commercially switched-on when it comes to stock, GP and ordering
  • Is organised, hands-on and exceptionally well presented
  • Can train and develop a team rather than simply tell them what to do
  • Has high standards — particularly when nobody is watching
  • Is confident dealing with guests, suppliers and the inevitable chaos of a busy service
  • Can have a laugh, but knows when it’s time to get serious
