Assistant Manager

Nancy’s Cocktail Bar
London Bridge, London
Full-time
£55,000 per year

Join the management team at Nancy’s

Nancy's is London Bridge's newest premium cocktail destination. Landmark views, a late license, serious drinks and a space designed to bring a little 70s spirit back to London nightlife.

Having opened in June, Nancy's is going from strength to strength and we're looking to expand our amazing management team. We're looking for dynamic hospitality professionals who can help us elevate the guest experience and deliver the tailored service we want to achieve.

The Role

As Assistant Manager, you will be at the heart of Nancy’s, helping the team deliver smooth service, keeping operations flowing, and controlling the look, feel, and ambience of the room.

As the venue continues to expand, building a second bar and fourth room, so will our staffing levels and so too will our management team.

Working closely with the Floor Manager, General Manager and Head Bartender you will help develop Nancy's style of service and culture, working towards the vision and goals already established while bringing your own flair to the venue.

Reasons to use Rodeo

I’m in my final year doing Economics and I don’t know whether to apply for grad schemes now or do a masters first. What do you think?

Honest answer — it depends on where you want to end up. A lot of top grad schemes (Big 4, civil service, banking) don’t need a masters. Let’s look at the ones you’d be competitive for now, and we can decide if a masters actually adds anything.

Also worth knowing: most autumn 2026 applications are open now. Timing matters more than you think.

Start with a chat, not a search bar

Grad scheme, placement, apprenticeship? Not sure what you want yet — that's fine. Your agent talks it through with you and turns "I have no idea" into a shortlist.

Only hits

No noise. No "maybe this fits." Just roles with a clear explanation of why they're right — and where to focus when applying.

You will train and develop the team to deliver the level of service and experience befitting a new and exciting cocktail bar, while building a strong understanding of our drinks programme and menu across the floor team.

A particular area of focus will be venue management and shift planning, taking control of a busy evening service with all the excitement and challenges that busy bars delivering high-end service bring.

With the multiple rooms, our potential for private hires and parties is huge. We are in the process of streamlining our systems to maximise these offerings. Our Assistant Manager and Floor Manager, along with our Host Team will be the key to unlocking this potential.

  • Support the day-to-day running of the venue and help ensure service is smooth, polished, and well paced
  • Build strong knowledge of Nancy’s drinks programme and menu, and help embed that knowledge across the team
  • Develop clear and effective communication between the floor, host, and bar teams
