Assistant Manager – Heard.

Burgers worth gathering for.

Heard. is a premium fast-casual smash burger concept from 2 Michelin-starred chef Jordan Bailey, born from a desire to take an everyday classic and make it quietly exceptional. We combine top-quality, thoughtfully sourced ingredients with the rigour and technique of the world’s best kitchens. No gimmicks, no shortcuts - just maximum flavour done right.

After a massive year touring the UK’s biggest events, we opened our permanent home in Borough last year, pairing our signature burgers with considered natural wines, craft beer, and a warm, efficient service style.

Now, with our second site in Soho thriving, we are looking forward to our next chapter. With our third and fourth sites on the horizon, we are looking to bolster our floor leadership team with an Assistant Manager - a detail-driven leader who keeps the engine room running behind the scenes while bringing effortless hospitality to the floor.

The Heard Package

  • Salary: £40,000 - £45,000 per year OTE (depending on experience and which Heard. restaurant you’re hired for)

What You’ll Do

  • Support the Business & P&L: Work closely with the AGM and GM on the financial backbone of the restaurant - taking ownership of weekly stock counts, inventory controls, and identifying cost-saving wins across the venue.
  • Master Scheduling & Rota Building: Craft efficient, balanced rotas that hit financial targets while taking care of the team. You’ll oversee holiday planning for the year and manage long-term staffing capacity.
  • Lead on the Floor: Represent Heard. during busy services. You’ll step up as the lead manager on shift, setting high standards of warmth, speed, and product knowledge.
  • Develop the Squad: Support the training and onboarding of Supervisors and Team Members. You’ll help turn new hires into hospitality pros, giving real-time feedback that elevates the room.
  • Drive Service Excellence: Ensure 90%+ of guest feedback reflects exceptional product execution, warm hospitality, and sharp timing.
  • Protect Compliance: Help maintain full site compliance across EHO, licensing, health & safety, and internal audit requirements.

What You Bring

  • Operational & Financial Fluency: Proven experience as an Assistant Manager or strong Duty Manager in a fast-paced, high-standard environment with hands-on experience in rotas, stock-taking, and holiday management.
  • A Grounded Leadership Style: Visible, calm under pressure, and organised. You take the numbers and operations seriously, but keep service feeling effortless and fun.
  • Genuine Passion: A love for top-tier food, craft drinks, and guest-centric hospitality.
