Job Title: Assistant Restaurant Manager – New Mediterranean Restaurant

Full Time | 60-Cover À La Carte Restaurant | Two AA Rosette Ambition

Salary: £32460.96

Location: Hoar Cross Hall, Staffordshire

We’re looking for an experienced and passionate Assistant Restaurant Manager to help launch and lead our brand-new 60-cover Mediterranean à la carte restaurant

This is a fantastic opportunity for someone who loves exceptional food, genuine hospitality and creating memorable dining experiences. Working closely with the Restaurant Manager, you’ll play a key role in establishing the restaurant from the outset and developing a style of service that reflects our ambition to operate at a minimum Two AA Rosette standard

The Role

As Assistant Restaurant Manager, you’ll be hands-on in the restaurant, leading from the floor and helping your team deliver warm, knowledgeable and polished service

You’ll support the Restaurant Manager with everything from developing the team and shaping service standards to managing costs, driving revenue and ensuring every guest leaves wanting to return

Your Responsibilities Will Include

  • Supporting the successful opening of our new Mediterranean restaurant
  • Leading the restaurant team during day-to-day service
  • Delivering and maintaining service standards appropriate to a minimum Two AA Rosette level
  • Creating a warm, engaging and memorable experience for every guest
  • Being highly visible on the restaurant floor, personally welcoming and saying farewell to guests
  • Leading pre-service briefings and ensuring the team is prepared for VIPs, special occasions and daily specials
  • Recruiting, inducting, training and developing team members
  • Coaching the team on menu knowledge, service standards and confident upselling
  • Supporting performance reviews, probation meetings and ongoing development plans
  • Working closely with the kitchen and wider Food & Beverage team to continuously improve the guest experience
  • Responding to guest feedback and resolving any concerns professionally
  • Supporting stock takes, forecasting, budgets and sales reporting
  • Monitoring payroll, stock, waste and operational costs
  • Identifying opportunities to increase revenue and profitability
  • Maintaining excellent standards of cleanliness, food hygiene and Health & Safety
  • Supporting other Food & Beverage areas when required

About You

We’re looking for someone who combines attention to detail with genuine personality and warmth

You’ll ideally have experience within a quality restaurant, luxury hotel, fine dining or Rosette-standard environment and be ready to take the next step in your hospitality career

Must have:

  • Previous restaurant supervisory or management experience
  • A genuine passion for food, wine and exceptional hospitality
  • An appreciation for Mediterranean cuisine and dining
  • Experience delivering high standards of restaurant service
  • Excellent leadership skills and the ability to motivate and develop a team
  • The confidence interacting with guests and building rapport
  • Excellent attention to detail
  • Good commercial awareness, including labour, stock, waste and revenue
  • The ability to remain calm and organised during busy services
  • A proactive approach – you’ll spot what needs doing rather than waiting to be asked
  • A desire to continuously improve both the guest experience and team performance

Desirable:

  • Experience within a Two AA Rosette or comparable fine-dining environment

Additional Information

  • Full-time contract - 40 hours per week
  • Working 5 out of 7 days a week
  • Full flexibility is key as you will be expected to work as and when necessary to meet the needs of the team and the business such as working evenings, weekends, and Bank Holidays
