Department: Kitchen / Stewarding

Location: STK London – ME London Hotel, The Strand

Reports to: Executive Head Chef

Package: Competitive Salary + Tronc

Mission

As Back of House Supervisor at STK London, you will oversee the stewarding operation and support the Executive Head Chef in maintaining exceptional cleanliness, hygiene, and organisation across all back-of-house areas. You will lead the Kitchen Porter team, ensuring operational efficiency, compliance with food safety standards, and seamless support for the kitchen brigade, helping deliver the premium dining experience that defines the STK brand.

  • Supervise the daily operation of the Kitchen Porter and Stewarding team, ensuring efficient support across all kitchen areas.
  • Maintain exceptional cleanliness, hygiene, and organisation throughout kitchens, storage areas, staff canteen, and refuse areas.
  • Ensure all kitchen equipment, crockery, utensils, and operating equipment are cleaned, sanitised, and available for service.
  • Monitor HACCP, food safety, health & safety, and COSHH compliance at all times.
  • Coordinate daily cleaning schedules, deep cleaning programmes, and equipment maintenance.
  • Support stock control of cleaning chemicals, stewarding supplies, and operating equipment while minimising breakages and losses.
  • Plan and supervise Kitchen Porter rotas in line with business levels and operational demands.
  • Conduct daily briefings, coach and develop team members, and maintain high performance standards.
  • Work closely with the Head Chef and kitchen brigade to ensure smooth service during high-volume periods.
  • Maintain accurate departmental records including cleaning logs, breakage reports, maintenance requests, and compliance documentation.

What we’re looking for

  • Minimum 2 years' experience in a Back of House, Stewarding, or Kitchen Porter supervisory role within a luxury hotel or high-volume restaurant.
  • Strong knowledge of HACCP, COSHH, food hygiene, and health & safety legislation.
  • Previous experience leading, motivating, and developing Kitchen Porter or stewarding teams.
  • Excellent organisational skills with the ability to manage cleaning schedules, rotas, and operational priorities.
  • Experience monitoring stock levels, stewarding equipment, and inventory controls.
  • Ability to remain calm, organised, and hands-on during busy service periods.
  • Strong communication and teamwork skills with the ability to collaborate across Kitchen and Food & Beverage departments.
  • Proactive approach to maintaining exceptional cleanliness, operational standards, and continuous improvement.
  • Flexible approach to shifts, including evenings, weekends, and public holidays.
  • Passion for hospitality and delivering exceptional support behind the scenes.
