Join The Street Bakeshop as a Baker Apprentice and learn real craft baking, hands-on, from day one. You'll work alongside our bakery team producing sourdoughs, artisan breads and speciality bakes while earning a fully funded Level 2 qualification. No experience needed — just passion, care and pride in the craft.
Wage
£18,720 for your first year, then could increase depending on your age

Hours
Full-time, shift-based role. Shifts vary across Monday to Sunday, including early starts such as 4.00am - 2.00pm or 6.00am - 3.00pm, to match bakery production needs. Some weekend and bank holiday working will be required.

Most of your apprenticeship is spent working. You’ll learn on the job by getting hands-on experience.
What you'll do at work
Working alongside experienced bakers, you will learn the full baking process from ingredient preparation through to producing high-quality sourdoughs, artisan breads and speciality baked goods. You will develop practical skills, gain industry knowledge and play an important role in maintaining the high standards our customers expect.
Key Duties
- Weigh, measure and prepare ingredients accurately for daily production
- Mix, shape, prove and bake sourdoughs, artisan breads and speciality products under the guidance of experienced bakers
- Learn to safely operate bakery equipment, including mixers, provers and ovens
- Monitor fermentation, dough development and baking consistency throughout production
- Follow recipes and production methods accurately to ensure consistent product quality
- Check finished products meet required standards for appearance, flavour, texture and finish
- Maintain full compliance with food safety, hygiene and allergen control procedures
- Keep bakery work areas clean, organised and audit-ready by following cleaning schedules
- Support stock rotation and ingredient management to minimise waste and maximise freshness
- Report stock shortages, equipment faults or product quality concerns to the Senior Baker promptly

What you'll learn
Course contents
- Select, prepare/set-up and use equipment and machinery.
- Clean and check tools and equipment.
- Monitor materials/stock levels and controls for example, first in first out, temperature and environment.
- Receive and store materials/stock from external suppliers and/or internal stores.
- Store finished goods.
- Package and label bakery products for example, allergens.
- Comply with health & safety, food safety, environmental procedures, PPE, hygiene and method statements.
- Clean and tidy work area. Dispose of waste and recycle.
- Communicate verbally for example, with colleagues, suppliers and customers.
- Record information - paper based or electronic.
- Identify bakery product problems/faults and underlying causes.
- Read and interpret information for example, specification, recipe and production plan.
- Plan bakery tasks.
- Prepare for bakery tasks. Obtain materials.
- Prepare ingredients.
- Weigh or check weight of ingredients/products.
- Mix ingredients.
- Deposit, scale or cut/divide mixture.
- Mould products.
- Monitor prove.
- Pre-bake and/or post-bake dressing of product.
- Operate ovens.

Desirable qualifications
GCSE in:
- English (grade 4/C or above or equivalent)
- Maths (grade 4/C or above or equivalent)
