Our Hotel

The Balmoral is located at Edinburgh’s most prestigious address, No. 1 Princes Street, where the Old Town stops and the New Town begins. Our hotel’s majestic clock defines the city’s skyline and since the day we opened in 1902 it has run three minutes fast to ensure our guests will never miss their train.

Our Role

As a pivotal member of our management team, you will be responsible for the flawless running of the kitchens guiding your dedicated team to deliver exceptional dishes of the world-class calibre Rocco Forte guests expect. You will be responsible for all the culinary offerings in Meeting and Events for up to 400 guests, Afternoon Tea, In Room Dining and Team Member Restaurant.

Your Key Responsibilities

Rocco Forte Hotels are a collection of iconic hotels that respects the individuality of location and its team members, encouraging them to be their natural selves while providing a local, authentic experience to our guests.

As a valued part of the Forte family, you will:

  • Lead an outstanding department by setting high standards, providing guidance and development to achieve consistently high levels of service
  • Create and seek opportunities to learn and to develop others to drive performance of the department and the hotel
  • Understand our markets, competitors and business model
  • Ensure the department consistently delivers service standards
  • Use financial and other management principles to deliver business results
  • Take ownership and responsibility for departmental results
  • Align with hotel strategy and set departmental goals
  • Promote The Balmoral to becoming a recognised culinary destination by creating memorable guests’ experiences uncompromised passion for excellence.
  • Develop, motivate, supervise, and coach departmental team members in maintaining a culture in compliance with mission and values.
  • Ensure personnel, physical and environmental hygiene is maintained in adherence to all compliance guidelines.
  • Produce all the food required for the assigned kitchens while controlling ordering and requisitions in order to meet budgets

Who We Are Looking For

We are seeking enthusiastic and dedicated individuals who are passionate about celebrating the individuality of our hotels and guests. We are looking for team members who bring:

  • High personal and professional standards
  • Excellent communication skills with colleagues, guests and management team
  • Thorough practical knowledge of the department, individual roles and responsibilities
  • Confidence to lead, encourage, motivate and manage the department to exceed expectations
  • Passionate about bringing the best seasonal, local produce into multiple environments and will manage and motivate your team to ensure they consistently achieve culinary excellence – nurturing their personal and professional development.
  • Naturally, you will bring exceptional knowledge of high-end food and wine, as well a working knowledge of and experience with a wide variety of cuisines. You will also maintain the financial control of the department, working closely with the Executive Chef to ensure targets are hit and optimum profitability is achieved.
  • You will have experience in a similar high-end kitchen role and be given the support to further develop your skills and career with us. You must be highly motivated, have exceptional attention to detail and aim for service perfection at all times.
