Nor’ Loft Manager

Nor’ Loft is a unique champagne lounge in the heart of Edinburgh. We are currently recruiting for a Nor’ Loft Manager, as unique as our venue, to manage the day-to-day operation of Nor’ Loft, which is situated on the rooftop of Market Street hotel.

About the Role

We're looking for an inspirational Nor' Loft Manager to lead the day-to-day operation of our rooftop food and beverage venue. This is a hands-on management role for someone who thrives on delivering outstanding service, inspiring their team and driving commercial success. You will be responsible for the continued success and development of Nor' Loft, ensuring your team is trained and knowledgeable about our offering, and that every guest enjoys a warm, personal and memorable experience while maintaining the highest standards of service.

You will be passionate about every aspect of the Nor' Loft operation, from delivering exceptional breakfast service to our all-day small plates offering. Champagne is at the heart of the Nor' Loft experience, and you will champion our extensive champagne collection while developing your team's product knowledge and confidence. You will also oversee our signature cocktails and wider beverage offering. A strong knowledge of champagne or a WSET qualification would be advantageous, but is not essential, as full training will be provided.

In addition, you will undertake Duty Manager responsibilities across the hotel when required, supporting the wider operation and ensuring consistently high standards throughout the guest journey.

Previous management experience within a bar, restaurant or hotel environment is essential. This is an excellent opportunity for an ambitious hospitality manager looking to take the next step into a senior leadership role.

Key Responsibilities

Development of Nor’ Loft

  • As a senior member of the team, you will strive for continued development of Nor’ Loft.
  • You will need the energy required to developing a professional yet personable positive team.
  • Anticipate guest needs and requirements, going the extra mile at every opportunity through a hands-on approach.
  • Work with the Nor’ Loft Development Manager to develop menus and other promotions.
  • Maintain consistently high presentation standards across the venue.
  • Encourage innovation and continuous improvement throughout the department.
  • Ensure the team represents the Nor' Loft and Market Street hotel brand with professionalism.
  • Ensure staff adhere to grooming policy – uniforms, cleanliness and hygiene.

Operational Leadership

  • Lead the day-to-day operation of Nor' Loft, ensuring exceptional service at every stage of the guest journey.
  • Lead by example, maintaining the highest standards of hospitality, presentation and professionalism.
  • Oversee breakfast, all-day dining and bar operations, ensuring consistency across every service.
  • Ensure compliance with company standards, food safety, licensing and health & safety procedures.
  • Review and continually improve departmental procedures and standard operating procedures.
  • Structured training of new menus and products is key, you will be responsible for creating all training materials ensuring your team are experts in our product offering.
  • Support the hotel operation by acting as Duty Manager when required.

Administration and Communication

  • Ensure clear daily briefings and handovers are delivered to the Nor Loft’.
  • Produce weekly rotas and manage annual leave requests.
  • Complete payroll accurately and on time.
  • Prepare monthly departmental reports and performance updates within Nor’ Loft.
  • Maintain effective communication with the Operations Manager and wider hotel teams.

People Leadership

  • Promote a positive attitude and team ethos, setting the pace and standards and encouraging mutual respect.
  • Communicate a vision of success which the team want to be part of.
  • Praise and recognise good performance and set targets.
  • With the support of People and Training Manager, you will assist with the recruitment and training of new starts, including induction, mandatory training as well as developing training plans.
  • You will be involved in managing attendance, return-to-work, probation and performance meetings, as well as employee relations.
  • Structured training of new menus and products is key, you will be responsible for creating all training materials ensuring your team are experts in our product offering.
  • Focus on the team development and conduct regular team meetings and training sessions.
  • Engage and coach your supervisors and team leaders to assist you with the team development.

Commercial Performance

  • Manage Nor’ Loft covers through our booking system and maximising table covers and revenue.
  • Work with Sales and Marketing team to ensure the setup of website is meeting the needs of the Nor’ Loft.
  • Ensure any promotions are communicated to the Sales & Marketing team to communicate externally.
  • Maximise revenue through effective management of reservations, table allocation and guest spend.
  • Manage payroll and weekly rotas in line with business demand.
  • Identify opportunities to increase sales through seasonal offers, events and upselling.

Guest Experience

  • Focus on guest journey
  • Implement pre-arrival producers and communication to guests
  • Anticipate guest needs and confidently resolve any issues or complaints.
  • Monitor guest feedback and online reviews, implementing improvements where appropriate.
  • Ensure effective communication before arrival for group bookings and special occasions.
  • Drive a culture where exceeding guest expectations is the standard.

About You

You'll be an experienced hospitality manager who enjoys leading from the floor and creating memorable guest experiences. You'll have excellent organisational skills, a calm approach under pressure and a passion for developing people.

  • Previous management experience within a premium bar, restaurant within a 4 and 5* hotel.
  • Strong leadership and people management skills.
