KONG is a Chinese Public House in Shoreditch, London, created by Andrew Wong of two-Michelin-starred A.Wong and Amar Radia, co-founder of Dishoom. Located in a restored Victorian pub dating from 1792, KONG brings together the heritage of East London pubs and the traditions of the Chinese kitchen. The venue has a long history of trading under different names, now reimagined as KONG from 2026. Open all day, it offers dumplings in the morning, noodles at lunch, and grills with cold pints in the evening. KONG is designed as an inclusive, welcoming space for guests to enjoy distinctive food, drink, and atmosphere.
Role Description
The Bar Manager role at KONG is a full-time, on-site position based in London. The Bar Manager oversees day-to-day bar operations, including managing bar staff, coordinating schedules, and ensuring service standards are consistently met. This role involves monitoring stock levels, placing orders, managing suppliers, and maintaining cost control for beverages. The Bar Manager is responsible for ensuring high levels of guest satisfaction, resolving service issues, and maintaining a welcoming environment. They will collaborate with the wider restaurant team on menu development, promotions, and events, while upholding health, safety, and licensing requirements and supporting staff training and performance.

- Strong customer service skills with a focus on creating welcoming, high-quality guest experiences.
- Hands-on experience in food & beverage operations, including bar management and stock control.
- Clear and effective communication skills for coordinating with team members and guests.
- Ability to train, coach, and support bar staff to maintain consistent standards.
- Sales awareness, including experience driving revenue through promotions, upselling, and events.
- Previous bar or hospitality management experience in a busy, high-volume environment.
- Solid understanding of licensing laws, health and safety regulations, and responsible alcohol service.
- Organizational and problem-solving skills, with the ability to stay calm under pressure.
- Flexibility to work evenings, weekends, and holidays as required.
