Bar Manager — The Rusty Seagull

Location: The Rusty Seagull, Portobello
Salary: £27,500 - £29,000 per year, depending on experience
Hours: Full-time - evenings, weekends and busy events required
Start date: Mid-September 2026
Reporting to: General Manager

We’re looking for our next Bar Manager

The Rusty Seagull is looking for a hands-on, energetic Bar Manager to take the lead at our Portobello bar.

You’ll be at the heart of the venue, leading the team, looking after our customers, keeping the bar running smoothly and helping shape what comes next.

This is a fantastic opportunity to join Winton Brewery, an independent, community-driven brewery from East Lothian, as we continue to grow.

About Winton Brewery

We’re an independent brewery built around bold, small-batch beers, good people and great places to drink them.

From our rustic taproom in Haddington to the hugely popular Station Yard Micropub in Dunbar, we’ve built a reputation for creating welcoming spaces with plenty of character.

In 2025, we took the next step in our journey by opening The Rusty Seagull in Portobello, and we’re now looking for someone who wants to play a key role in making it the best bar it can be.

Your role

As Bar Manager, you’ll take ownership of the day-to-day running of The Rusty Seagull.

You’ll lead from the front, supporting and developing your team, delivering excellent customer service, keeping standards high and making sure shifts run smoothly.

You’ll also have the opportunity to bring your own ideas to the table, from beer selections and events to new ways of engaging with our customers and the local community.

What you’ll be doing

  • Lead the day-to-day operation of The Rusty Seagull
  • Recruit, train, support and manage a small, friendly bar team
  • Create a welcoming atmosphere and deliver consistently excellent customer service
  • Manage stock levels, place orders and build strong supplier relationships
  • Plan and manage staff rotas to keep the bar running efficiently
  • Maintain high standards of health & safety, hygiene and licensing compliance
  • Help organise and host events, tastings, live music and other special nights
  • Work closely with the brewery team to showcase new beers, products and initiatives
  • Be a positive ambassador for The Rusty Seagull, Winton Brewery and our values
  • Report directly to the General Manager

What we’re looking for

We’re looking for someone who is confident, organised and genuinely passionate about hospitality.

You’ll ideally have:

  • Previous experience managing or supervising a bar or hospitality team
  • Strong leadership and communication skills
  • A genuine interest in craft beer
  • The ability to stay calm, positive and organised when things get busy
  • A proactive, hands-on approach, you’re happy to muck in and lead by example
  • Flexibility to work evenings, weekends and busy event nights
  • A Personal Licence, or a willingness to obtain one
  • Cellar management experience is desirable, but not essential
