ACRE Hospitality brings together Birchwood and Nettle, our thriving Events by Nettle business and the wider Members Community offer at The Conduit in Covent Garden. Created for Levy UK & Ireland’s food and beverage operation at The Conduit, ACRE brings these experiences together under one hospitality identity, with chef partner Will Devlin shaping the food direction. We are building a team around great food and warm, generous hospitality.
Our approach begins with food, farming and hospitality. We work closely with farmers, growers, fishermen and producers, celebrating ingredients that are grown, reared and sourced with care. We believe in seasonality, sustainability and doing things the right way. Across ACRE, you will also gain experience through our restaurants, bars, events and member spaces.
Your Place in ACRE
Nettle is a recently opened rooftop restaurant guided by the British landscape and the seasons. Its menu celebrates carefully sourced produce through thoughtful cooking, matched by service that is knowledgeable, relaxed and personal. The dining room, balcony and garden look out across the city, giving the restaurant a distinctive setting throughout the day.
As a Bartender at Nettle, you will prepare thoughtful, beautifully presented drinks and deliver warm, engaging hospitality. Working with the Head Bartender, floor and kitchen teams, you will explore ingredients, flavour and provenance, helping create small-batch seasonal cocktails and non-alcoholic drinks that complement the food. Strong bar fundamentals and curiosity will give you the foundation to develop your craft. Nettle will be your primary home within the wider ACRE team.

How You’ll Make An Impact
- Prepare and serve cocktails, wine, beer and non-alcoholic drinks consistently and to a high standard, using sound knowledge of classic cocktails, spirits and core bar techniques.
- Work with the Head Bartender and kitchen to explore seasonal ingredients and flavours that complement the menu. Contribute ideas for small-batch cocktails and non-alcoholic drinks.
- Prepare garnishes, infusions, syrups and other small-batch ingredients to agreed recipes and standards, supporting a seasonal, ingredient-led and low-waste approach.
- Build knowledge of Nettle’s wines, spirits, ingredients and producers. Understand how the drinks and food menus work together and make thoughtful recommendations.
- Deliver warm, natural service, guide guests towards drinks that suit their tastes and menu choices, and share product stories in an approachable way.
- Build relationships with members and guests and work closely with the floor team to keep drinks service smooth and timely.
- Set up and maintain a clean, organised and well-stocked bar. Support stock control, ordering, deliveries and accurate product rotation, making thoughtful use of ingredients and minimising waste.
- Look after bar equipment, report maintenance issues promptly and follow licensing, responsible alcohol service, hygiene, allergen and health and safety procedures.
- Take an active part in tastings and menu changes, respond positively to coaching, support new colleagues and contribute to an inclusive team across ACRE.
- Undertake other duties reasonably requested in line with your role and the needs of the business.

For This Role, You Will Also Bring
- Previous bartending or relevant bar experience within a quality hospitality environment, with good knowledge of classic cocktails and core techniques.
- Curiosity about seasonal ingredients, food and flavour, and an interest in developing alcoholic and non-alcoholic drinks that complement a menu.
- Enthusiasm to develop your wine knowledge. Existing wine knowledge is advantageous.
- Pride in presentation, close attention to detail and the ability to remain calm, organised and efficient during busy service.
- Confident communication and a collaborative approach to working with kitchen, bar and floor colleagues.
- A willingness to contribute ideas, learn from feedback and develop your skills. Extensive mixology or cocktail-development experience is not required.
