Kepak St. Merryn in Merthyr Tydfil has combined beef and lamb processing and packing facilities. We offer beef and lamb products ranging from retail ready cuts for butchers' counters to branded packaged meat, all as part of our service; raised on open pastures, sourced from local farmers and hand-selected by our master butchers, we produce beef and lamb products with integrity and unmatched quality assurance.

We are currently recruiting for a Boning Hall Supervisor to work in our busy Beef Boning Hall on our Merthyr Tydfil site. This is a full-time, permanent position working Monday to Friday from 6.00am with a competitive salary.

Job Role

Responsible for all Boning Hall Operatives ensuring consistency and compliance to boning, butchering, trimming and finishing requirements for red meat for sale and consumption, in accordance with client specifications and Company SOP's. Responsible for the co-ordination of the department activities to produce safe, quality products to agreed quantities and deadlines in a clean and hygienic environment.

Key Responsibilities

  • Demonstrate and monitor compliance to Company's PPE requirements, knife safety requirements, hygiene and quality standards, department SOP's and customer specifications
  • Maintain superior understanding and knowledge of customer specifications, yields and margins
  • Roll out specification/task changes and/or new customer requirements to all Boning Hall Operatives ensuring full understanding and compliance
  • Allocate team resources accordingly to ensure required staffing levels to meet daily production targets
  • Perform boning, butchering, trimming and finishing tasks at line speed
  • Completing assigned tasks in a timely manner to meet daily targets
  • Ensure product is of the highest standard, reporting any issues to the Manager immediately
  • Familiar with daily production plan, working with team to set up line, completing relevant checks and ensuring materials are ready to use
  • Oversee/perform all prestart, hygiene and safety checks as required
  • Complying with quality specifications and understanding yield values
  • Minimising and reporting of waste appropriately
  • Identifying and/or reporting any accidents or near misses, assisting with investigations as instructed/necessary
  • Report all breakages, damages or defaults of equipment immediately to the Boning Hall Manager, only using equipment when safe to do so
  • Participate fully in Lean Manufacturing processes and embrace new methods of working
  • Identifying and effectively addressing performance issues, escalating to management/HR as appropriate
  • Monitoring and identifying team training requirements, providing coaching, mentoring or delegating further training as required
  • Actively participate in all required company training
  • Working with management to identify and develop talent and high performers, including succession planning
  • Any other duties as instructed by management and within the competency of the post holder
  • Cooperate and assist with Internal and External audits as required, implementing any corrective and preventative actions
  • Building a system: i.e. simplifying the production process, writing procedures, making production more efficient, measuring & utilizing data
  • Continual improvement and reporting on section throughput, efficiencies, costs etc
  • Promote and encourage staff to deliver a quality product on a consistent basis by leading by example
  • Staff management for annual leave, absence, disciplinary and grievance processes, with support as required from management
  • Promoting an engaging and positive culture
  • Evaluate and manage staff in accordance with Group Policies, in particular the Hygiene, Food Safety, Health and Safety and HR policies

Requirements

  • Exceptional competence and significant experience in pace line butchery essential
  • Meticulous attention to detail essential
  • Extensive understanding of Company's SOP's and customer specifications
  • People management and influencing skills essential
  • Previous experience working in a high-volume meat processing factory essential
  • Able to work in chilled environment
  • Manual handling ability and awareness
  • Fluent English, ability to communicate well in written and oral form with multi-nationals on all levels essential
  • Flexibility to meet daily production targets
  • Consistent approach and strong work ethic
  • Able to work under own initiative and as part of a team
  • Adaptable to change and production demands
  • Problem solving skills, lateral thinker
  • Computer literate, particularly in Microsoft Office packages, such as Excel
