Our story
Back in 2019 in Paris, two friends, Charles and Victor, opened a brasserie together - the kind of place Parisians disappear into for a 3-hour lunch.
They called it La Nouvelle Garde: a promise to eat and drink the French way, done properly, 100% homemade, cooked from scratch from the highest quality seasonal ingredients.
They served classic French dishes prepared with care, generosity and excellence in beautiful, relaxed spaces full of energy.
Guests loved it!
So they opened another one, and then another one. And 9 brasseries later, it was finally time to bring it to London.
In July 2026, in Sloane Square, Brasserie Olivia was born.
This is just the beginning of our London story, and we'd love you to help write the next chapter.
The role
As our Breakfast Sous Chef, you’ll take ownership of the breakfast operation at Brasserie Olivia.
You’ll work closely with the Head Chef to deliver our new French breakfast offer, from preparation and service to stock, ordering and daily organisation.
You’ll be the first chef in the restaurant each morning, taking responsibility for setting up breakfast service and making sure everything is ready for the day ahead.
This is a new and growing part of the business. You’ll play an important role in making it successful and, as breakfast grows, helping build and develop the team around you.
What Success Looks Like
- You’ll take ownership of the morning operation, ensuring the kitchen is organised, prepared and ready for breakfast before the first guests arrive.
- You’ll deliver a consistently excellent breakfast service, with every dish prepared and served to the highest standard.
- You’ll understand the commercial performance of breakfast and contribute ideas that help grow revenue and make the operation successful.
- You’ll work closely with the Head Chef to continuously improve the breakfast offer, responding to feedback and what we learn as the business grows.
- You’ll manage preparation, ordering, stock and par levels effectively, minimising waste and protecting food cost.
- You’ll maintain excellent food safety, cleanliness and kitchen standards throughout every shift.
- You'll communicate clearly with both the kitchen and front of house teams, creating a smooth breakfast service and a great guest experience.
- As the operation grows, you’ll help build, coach and develop the breakfast team.

What You'll Bring
- You’re already working at Junior Sous Chef or Sous Chef level, or you have strong experience independently running a breakfast operation.
- You’re looking for a senior kitchen role with a consistent morning working pattern (finishing at 1pm)
- You’re exceptionally reliable and punctual, and comfortable with the responsibility of being the first chef in the restaurant each morning (5:30am start).
- You have strong hands-on kitchen experience, with excellent knowledge of food preparation, cooking techniques and kitchen operations.
- You’re highly organised and confident taking ownership of a kitchen operation from preparation through to service.
- You understand the commercial side of a kitchen, including stock, ordering, waste, food cost and performance.
- You’re curious, open to feedback and excited by the opportunity to help develop and grow a new part of the business.
- You have strong leadership skills and the ability to build and develop a team as the breakfast operation grows.

- Annual salary from £45,000 (inclusive of Tronc)
- Set shift pattern across 5 working days: 05:30 - 13:00
