Purpose of the role

The Brewing Operative plays a hands-on role in the production process — working within the Brewing Team to produce beer from raw materials, all the way through to preparing and signing off beer for packaging. The role rotates through the shift pattern between wort production and cellaring, following the direction set day-to-day by the Head Brewer.

Working pattern

The role covers two shift windows, Monday to Sunday:

  • Early shift: 6:00 am – 2:00 pm
  • Late shift: 12:00 pm – 8:00 pm

The overlap between shifts covers handover between the two halves of the working day.

Weekend cover is scheduled in advance as part of the Brewing Team rota. Any weekend day worked is compensated with a day off in lieu, scheduled at the same time as the weekend cover.

Key accountabilities

1. Daily production tasks

  • Follow SOPs to carry out daily brewing and cellaring tasks, including but not limited to:
    • Start of day, end of day and deep clean checklists
    • Tank CIPs, brew tank preparation and transfer tank preparation
    • Wort production
    • Daily checks (gravity, pH, cell counts, ABV, DO, CO2) and other minor ops
    • Yeast cropping and pitching
    • Dry hopping
    • Transfers
    • Carbonating

2. Quality and records

  • Complete daily record keeping for all aspects of brewing and cellaring
  • Check that set quality (QA/QC) specifications and parameters are met by every batch, reporting any and all deviations to the Head Brewer
  • Ensure all beers are on schedule, reporting any necessary deviations to the Head Brewer
  • Ensure raw material stock is well managed and maintained

3. Handover and communication

  • Maintain a clear and timely handover of signed-off beer to the Packaging Team
  • Participate in daily, weekly and monthly meetings with the Brewing Team and wider Production Team
  • Be engaged with beer quality, keeping in touch with the wider brewing industry, and contribute to discussions on recipe and process improvements

4. Health, safety and hygiene

  • Maintain the brewery and workspace at the highest possible hygiene standards
  • Maintain health and safety compliance at all times
  • Be engaged with the product and work, and maintain a positive attitude towards continuous improvement

Selection criteria

Essential

  • Minimum 1 year’s experience in a production brewery
  • Able to work the shift pattern (early and late shifts, Monday to Friday) and scheduled weekend shifts, with a day off in lieu provided for scheduled weekend work
  • Excellent communication, time management, troubleshooting and organisational skills
  • Commitment to quality, safety and continuous improvement
  • Excellent attention to detail

Desirable

  • Experience with automated brewery plants, CIP systems and QA/QC equipment
  • Forklift certification
  • Brewing qualification — CIBD General Certificate in Brewing or equivalent. Where not already held, DEYA supports and wishes its members of the brew team working towards this qualification following successful completion of probation.
