Ready to step up? You know your pizza. You know your kitchen. Now it’s time to lead.
As Sous Pizzaiolo, you’ll be the Head Pizzaiolo’s right hand and a key part of the leadership team in the kitchen. You’ll help run the day-to-day operation, keep standards sky-high and make sure the team is performing at its best — all while staying close to the craft you love. This isn’t just about making great pizza. It’s about leading people, owning a service and becoming the kind of Pizzaiolo others look to for direction.
And if your sights are set on becoming a Head Pizzaiolo, this is where you start making that next move.
So, who are Rudy's?
Born in Manchester in 2015, Rudy's was built around one simple idea: make proper Neapolitan pizza and do it really, really well.
- Fresh dough made every day
- The finest Italian ingredients
- Pizzas cooked in around 60 seconds
We're now 39 sites across the UK and still growing — but the passion that started Rudy's hasn't gone anywhere.
We're serious about our pizza, serious about our people and serious about creating kitchens where great Pizzaiolos can build a career.
What will you be getting stuck into?
As Sous Pizzaiolo, you'll work closely with the Head Pizzaiolo to keep the kitchen running smoothly and the team performing at its best.
You'll Be
- The Head Pizzaiolo's right hand: Supporting them with the day-to-day running of the kitchen and stepping up to lead when they're not there
- Leading service: Managing prep, workflow and service execution to keep things running smoothly when the pressure is on
- Setting the standard: Making sure every pizza meets Rudy's Neapolitan standards, every single service
- Leading the team: Motivating, coaching and supporting Pizzaiolos at every level
- Developing people: Helping train and develop the team, spotting potential and supporting their progression
- Keeping things safe: Maintaining excellent food hygiene, allergen and health & safety standards
- Supporting the operation: Helping with stock, ordering, waste reduction and overall kitchen organisation
- Taking charge: Stepping into the Head Pizzaiolo's shoes when they're away and owning the kitchen with confidence

I’m in my final year doing Economics and I don’t know whether to apply for grad schemes now or do a masters first. What do you think?
Honest answer — it depends on where you want to end up. A lot of top grad schemes (Big 4, civil service, banking) don’t need a masters. Let’s look at the ones you’d be competitive for now, and we can decide if a masters actually adds anything.
Also worth knowing: most autumn 2026 applications are open now. Timing matters more than you think.

Grad scheme, placement, apprenticeship? Not sure what you want yet — that's fine. Your agent talks it through with you and turns "I have no idea" into a shortlist.
