Carmelina’s is opening on Lincoln’s Inn Fields on 1 October, and we’re now building our opening team.

In the heart of Covent Garden, Carmelina’s brings together three distinct spaces designed to take you from the first coffee of the morning to the last drink of the night. Inspired by the way Italians like to live — generously, socially and rarely in a hurry, each has its own character, but the same easy approach to food, drink and hospitality.

Carmelina’s is the heart of it. A lively ground-floor restaurant with an open kitchen, counter dining and dedicated wine bar, inspired by the elegance of everyday Italian life. It’s made for long lunches, lively dinners and tables that have a habit of staying considerably later than planned.

Al Banco takes its cues from the neighbourhood bars of Milan: coffee at the counter, breakfast in the morning and something stronger as the day goes on. It opens out onto The Terrace, a plant-filled outdoor space for lunch, aperitivo, people-watching and those quick drinks that somehow become dinner.

Carla’s List, tucked away downstairs. A late-night cocktail bar with a shimmering disco ball, a carefully curated soundtrack and no promises beyond a well-stirred Negroni. Cocktails, live entertainment and whatever happens next - for those not quite ready to call it a night.

JOIN THE TEAM

Ahead of our opening on 1 October 2026, we’re building the team that will bring Carmelina’s to life across all three spaces. We’re looking for people who share the same easy, generous approach to hospitality — full-time roles, with real opportunity to grow as we open.

BARTENDER

Carla’s List — the late-night cocktail bar

You’ll run the stick at Carla’s List, our downstairs cocktail bar — a room built for a shimmering disco ball, a carefully curated soundtrack and a well-stirred Negroni. This is a role for someone who takes technique seriously and takes themselves lightly.

WHAT YOU’LL DO

  • Prepare and serve cocktails to Carmelina’s standard, from classics to signature serves
  • Keep pace and composure during a full, late-running bar
  • Maintain stock, mise en place and cleanliness to a professional standard
  • Guide guests through the drinks list with genuine knowledge and warmth
  • Work closely with the bar and floor teams across all three spaces

WHAT WE’RE LOOKING FOR

  • Solid bartending experience in a high-volume cocktail or hotel bar
  • Confident technique — build, shake, stir, garnish — and an eye for consistency
  • A natural host who enjoys the late shift as much as the early one

BARISTA

Al Banco — coffee at the counter

Al Banco takes its cues from the neighbourhood bars of Milan — coffee at the counter, breakfast in the morning, something stronger as the day goes on. As our Barista, you set the tone for Carmelina’s first hours, one well-pulled espresso at a time.

WHAT YOU’LL DO

  • Prepare espresso-based drinks to a consistently high standard
  • Run a fast, tidy counter service during the breakfast and morning rush
  • Support the transition from coffee service into lunch and aperitivo
  • Keep the counter, machine and grinders clean and correctly calibrated
  • Welcome regulars and first-timers alike with genuine Italian counter-bar warmth

WHAT WE’RE LOOKING FOR

  • Experience on a high-volume espresso machine, ideally in an Italian-style setting
  • Pride in consistency — the tenth cup as good as the first
  • An early riser who enjoys the rhythm of a morning counter

BARBACK

Across all three spaces

The engine room behind every great bar. As Barback, you keep Carmelina’s, Al Banco and Carla’s List stocked, clean and ready to go — no request too small, no shift too busy.

WHAT YOU’LL DO

  • Keep bars fully stocked with spirits, mixers, garnish, ice and glassware
  • Support bartenders and baristas during service to keep pace
  • Maintain cleanliness of bar areas, cellars and storage throughout service
  • Assist with deliveries, stock rotation and stock counts
  • Learn the bars from the ground up — many of our senior bartenders started here

WHAT WE’RE LOOKING FOR

  • Energy, reliability and a genuine willingness to learn
  • Comfortable working at pace in a busy, physical role
  • Previous bar or hospitality experience is a plus, not a requirement

RUNNER

Across all three spaces

Long lunches, lively dinners and tables that stay later than planned — none of it works without a sharp, attentive Runner. You’ll keep food moving from the open kitchen to the table, exactly as it should arrive.

WHAT YOU’LL DO

  • Deliver food from kitchen to table promptly and accurately
  • Check every dish before it leaves the pass for presentation and accuracy
  • Communicate clearly with kitchen and floor teams during service
  • Support table maintenance — clearing, resetting and general floor upkeep
  • Learn the menu in depth to answer simple guest questions on the move

WHAT WE’RE LOOKING FOR

  • A quick, organised worker who stays calm under pressure
  • Strong communication and teamwork instincts
  • Hospitality experience helpful; enthusiasm essential

WAITER / WAITRESS

Carmelina’s — the ground-floor restaurant

In the restaurant, you are Carmelina’s — the open kitchen, the counter dining, the wine bar, all delivered through you. We’re looking for hosts who understand that Italian hospitality is generous, social and rarely in a hurry.

WHAT YOU’LL DO

  • Deliver warm, attentive table service from welcome to farewell
  • Guide guests through the food and wine list with real knowledge
  • Upsell thoughtfully — wine pairings, specials, an extra course
  • Work fluently with kitchen, bar and management throughout service
  • Help build the kind of long, lively table Carmelina’s is known for

WHAT WE’RE LOOKING FOR

  • Experience in a busy, quality-focused restaurant
  • Genuine interest in Italian food, wine and hospitality culture
  • A warm, unhurried manner that puts guests at ease

Experience is important, but so are personality, reliability and passion for hospitality. We want people who care about the details, enjoy looking after guests and want to grow with a new restaurant from the beginning.
