The Opportunity

HallMark Veterinary and Compliance Services is recruiting for an experienced Meat Hygiene Inspector (MHI) to join our Official Controls team in Bristol on a casual basis.

This is an excellent opportunity for an experienced and motivated MHI looking to support the delivery of Official Controls and play an important role in maintaining food safety, hygiene, and animal welfare standards within the UK meat industry.

As this is a casual position, there are no guaranteed hours. Successful candidates will work in line with operational requirements and the rota provided.

About the Role

As a Meat Hygiene Inspector, you will play a key role in supporting the Official Veterinarian (OV) in the delivery of official controls within an approved meat establishment.

Working under the direction of a Senior Meat Hygiene Inspector or MHI Team Leader, you will help ensure that food safety, hygiene, and animal welfare standards are consistently maintained.

Key Responsibilities

  • Conduct detailed post-mortem inspections of red meat species, including heads, carcasses, and offal.
  • Identify contamination, pathology, abnormalities, and other conditions requiring escalation to the OV.
  • Support the delivery of official controls in accordance with the Manual of Official Controls (MOC) and relevant FSA requirements.
  • Monitor Food Business Operator (FBO) compliance with food safety, hygiene, and animal welfare requirements.
  • Undertake residue, Trichinella, and TSE controls and collect samples where required.
  • Collect, assess, and verify Food Chain Information (FCI).
  • Apply health marks in accordance with legislative requirements.
  • Maintain accurate inspection records and documentation.
  • Record and support the collection of evidence relating to non-compliance.
  • Work closely with OVs, plant staff, FBO representatives, and other inspection team members to ensure official controls are delivered consistently and professionally.
  • Follow all health and safety, biosecurity, hygiene, and PPE requirements.
  • Contribute to team development, knowledge sharing, and continuous improvement.

Qualifications & Skills

Essential

  • FSA-authorised Meat Hygiene Inspector or qualified through an approved route.
  • UK-based experience working as an MHI within the red and/or white meat sectors.
  • Demonstrable understanding of FSA legislation and the Manual of Official Controls (MOC).
  • Competence in post-mortem inspection, residue sampling, and TSE controls.
  • Experience identifying abnormalities, contamination, and other conditions requiring escalation to the OV.
  • Understanding of animal welfare, hygiene, SRM, and ABP requirements.
  • Ability to accurately record inspection findings using relevant IT systems, including TAPP and Microsoft Office.
  • Effective communication and teamwork skills, with the ability to work collaboratively with OVs, plant staff, and FBO representatives.
  • Strong attention to detail and a commitment to maintaining high inspection standards.
  • Ability to manage multiple tasks while working to operational and time-sensitive requirements.
  • A proactive, resilient, and solution-focused approach.
  • A full UK or EU driving licence, or the ability to drive under another overseas licence and obtain a full UK licence within 12 months of arriving in the UK.

Desirable

  • Post-mortem inspection experience across multiple species.
  • Minimum of 1 year red meat MHI experience within the UK.
  • Previous experience mentoring or supporting junior colleagues.
  • A Veterinary Degree or an appropriate FDQ-accredited qualification, including:
    • Level 4 Diploma for Proficiency in Meat Inspection
    • Level 2 Certificate for Proficiency in Poultry Meat Inspection
    • Level 2 Award in Principles of the Safe Use of Knives in Meat Inspection
