Owned by Nica Burns and Max Weitzenhoffer, Nimax Theatres is an entrepreneurial and innovative organisation that owns and operates six theatres in the heart of London’s West End – the Apollo, Duchess, Garrick, Lyric, Palace, and Vaudeville. Additionally, Nimax also operates @sohoplace, a fully accessible and flexible theatre owned and developed by Nica Burns.
Our theatres currently have a combined capacity of 5,600 seats and, in addition to hosting some of the UK’s most critically acclaimed and successful plays and musicals, present a busy and varied programme of comedy, concerts and family theatre.

About the role
The Cellar Person is responsible for the smooth running of the cellar, bars and merchandise, and will oversee consistent and effective stock control, including ensuring stock levels are maintained throughout the building.
Key duties and responsibilities
- Place stock orders using Acquire, our stock ordering system, ensuring levels of stock are appropriate and not over/under the requirements of the business, and adapting this to the requirements of each show through the generation of operational par levels.
- Accurately record deliveries on any internal stocktaking systems and pass this information and any delivery notes to Management.
- Track internal deliveries on the internal stocktaking system.
- Liaise with other venues within the group in supporting the transfer of stock between theatres, recording all transfers.
- Support the monthly external stock take.
- Ensure all points of sale are sufficiently stocked ahead of each performance or event, liaising with Management and Supervisors to obtain relevant information for this.
- Ensure stock rotation is adhered to in the cellar and on the bars, and notifying Management if this is not being carried out, so that additional training can be provided to the bar team.
- Record and report any damaged or missing stock, and if necessary, investigate and implement new procedures to prevent a reoccurrence.
- Be present for stock deliveries, count the stock being delivered, and agree with the delivery person what has been delivered before they depart.
- Report any delivery discrepancies and damages to Management so a credit note can be raised.
- Ensure all stock is stored safely, to prevent it causing injury, and that the cellar and bar areas are kept clean and tidy at all times.
- Keep all bars, fridges and cellars secure.
- Order cleaning supplies as needed for the bars.
- Oversee the PPM of the equipment associated with the retail operation, such as fridges, freezers, ice machine, glass washer and verre de vin.
- Carry out any cleaning required.
- Work with Management to develop an appropriate cleaning regime for the staff to carry out, and flag any issues so they can be addressed.
- A flexible approach to working patterns.
- Train a small team of covers to deputise in your absence.
- Attend training courses as required.
- Adhere to all Health and Safety procedures to minimise injury and accidents.
- Ensure that the Company complies with the law in respect of licensing, trading standards and weights and measures issues, as per the ‘Authorisation to Sell Alcohol’ paperwork.

Person specification
Essential
- Ability to work under pressure and to time constraints and prioritise.
- Willingness to work mornings and weekends.
- A flexible approach to working patterns.
- Good team player, and proactive independent worker.
- Good literacy and numerical skills.
Desirable
- Bar experience.
- Manual handling training.
- Stock management experience.
This role is offered on a 30-hour contract, worked over five days per week.
