In spirit, Mollie’s was born in America – an offspring of the classic roadside motel and drive-in diner, a welcome stopover on a route to somewhere. We’ve borrowed the inviting red neon signs and the easy-going vibe, the burgers, the shakes, the bottomless coffee, a dash of nostalgia, but there’s nothing old-school about Mollie’s. Following the success of its first sites in Oxfordshire and Bristol. Mollie's Manchester opened it's doors in late 2025. A further ten locations are already earmarked as part of the immediate expansion plan to forge a new ‘budget-luxe’ sector in the travel and leisure industry.
Mollie’s is now seeking a Central Reservations & Events Agent looking to build a successful career with an inventive, high growth brand at the forefront of the hospitality sector.

POSITION OVERVIEW
To provide exceptional service to guests and partners by handling all reservation enquiries, group bookings, room allocations, and related administrative tasks. This role supports the smooth operation of the central reservations function, ensuring accuracy, consistency, and brand-standard communication across all booking channels.
KEY RESPONSIBILITIES
Guest Reservations & Enquiry Handling
- Respond promptly and professionally to all booking enquiries via phone, email, Socials, booking engine, and third-party platforms (OTAs, travel agents).
- Provide accurate information on availability, rates, and services, in line with brand
- Ensure all guest communications are clear, timely, and aligned to tone of voice
- Process amendments, cancellations, and special requests efficiently and
Group Booking Administration
- Support the administration of group bookings including corporate reservations, tour groups, and event-related stays.
- Manage rooming lists, block allocations, confirmations, and payment schedules as
- Liaise with site teams to coordinate group requirements and ensure accurate
Room Allocation & Daily Booking Management

- Assist with daily room allocation (“picking washing”), ensuring guest preferences, VIPs, access requirements, and interconnecting rooms are accounted for.
- Update allocations in response to cancellations, amendments, or operational
- Maintain accuracy across the PMS and ensure records reflect live occupancy
Accounts Receivable & Booking Support
- Process deposits, payments, proformas, and virtual cards in line with company finance
- Maintain accurate records for all prepaid and credit
- Assist with reconciliation of OTA and agent bookings, flagging any discrepancies to the Reservations Manager.
OTA & Travel Agent Liaison
- Handle booking changes, cancellations, and guest messaging from OTAs and travel
- Ensure all communications and updates are logged accurately in the system
- Support consistency across rate plans, availability, and booking policies as directed.
Documentation & Process Adherence
- Use approved templates, scripts, and SOPs when handling reservations and guest
- Maintain booking documentation and audit trails in line with brand and operational standards
- Contribute feedback to help improve processes and workflows within the reservations team.
