About Us

Our Covent Garden restaurant is only minutes away from the bustle of Covent Garden, on Tavistock Street, and offers a chic, stylish setting with an oyster bar, private dining room, and a traditional wet fish counter where you can buy fish to take home and cook yourself, or you can select any fish or crustacean with our fishmonger and have it cooked there and then to your liking.

The Opportunity

This is an ideal opportunity for a chef who is passionate about fish and would like the opportunity to work in the kitchen and in our fishmongers. You will spend approximately 75% of the working week on our customer facing fish counter, the rest of your time would be spent back of house running your own section in the kitchen. As your role grows you would help to train up our new front of house recruits and junior chefs on their fish knowledge – this really is a great opportunity to widen your career aspirations.

Key Responsibilities As a Fishmonger

  • Confidently prepare, skin, fillet and de-bone different varieties of fish and crustacea
  • Ensure products are served to Company Specifications
  • Ability to assist customers with making purchasing decisions
  • Effective communication with colleagues to ensure smooth running of service
  • Training of new recruits on fish knowledge and preparation

Key Responsibilities As a Chef De Partie

  • Working alongside fellow Line Chefs, Sous Chef’s and Head Chef to support them wherever possible while learning as you go
  • Preparing, cooking and presenting dishes within your speciality
  • Providing guidance and sharing your knowledge with junior chefs in the team
  • Helping the sous chef and head chef to develop new dishes
  • Monitoring portion and waste control to maintain profit margins
  • Food preparation to ensure kitchen is fully set up for service
  • Ensuring the highest levels of cleanliness and health & safety are kept at all times
