Role Description
The Chef De Partie will be responsible for managing a designated section of the kitchen, ensuring consistent preparation and presentation of dishes aligned with Baccalà’s seasonal and seafood-driven menu. Day-to-day tasks include:

The role involves close collaboration with the Head Chef and wider kitchen team on menu changes, specials, and new dish development, with particular attention to sustainable sourcing and Italian culinary influences. This is a full-time, on-site role based in Greater London, requiring flexibility to work evenings, weekends, and holidays as needed.
Qualifications
- Proven experience as a Chef De Partie or strong Commis Chef experience in high-quality, fresh-produce or seafood-focused kitchens.
- Solid knowledge of classic and contemporary cooking techniques, with an understanding of Italian cuisine and seasonal menu development.
- Strong skills in kitchen organization, time management, and working efficiently during busy services.
- Commitment to food safety, hygiene standards, and proper handling and storage of fresh ingredients.
- Ability to collaborate within a diverse team, communicate clearly, and contribute to a positive, respectful kitchen culture.
- Attention to detail in presentation and flavor balance, with pride in delivering consistent, high-quality dishes.
- Interest in sustainable sourcing, quality wines, and artisanal products, with willingness to learn about Baccalà’s food and wine philosophy.
- Culinary training or professional cookery qualification is beneficial; food safety certification is an advantage.
