ABOUT YOU

An exciting opportunity to join one of London's most ambitious luxury hotel kitchens. As we embark on the next chapter for Straits Kitchen, including the development of our brand-new state-of-the-art kitchen, we're looking for a passionate, ambitious and driven Chef de Partie to become part of our award-winning culinary team at Pan Pacific London. Straits Kitchen is proudly recognised with Two AA Rosettes—an accolade awarded to restaurants demonstrating exceptional culinary standards, technical excellence and consistency. Our menu celebrates the vibrant flavours of Southeast Asia, elevated through refined Western techniques and premium British produce, creating a truly unique dining experience. JOB SUMMARY

As a Chef de Partie, you will take ownership of your section, working closely with our Senior Sous Chefs and Sous Chefs to deliver the exceptional standards that have earned Straits Kitchen its Two AA Rosettes. This is an opportunity to work with exceptional ingredients, modern equipment and a talented team, producing dishes that combine refined Western culinary techniques with the bold, vibrant flavours of Southeast Asia. You'll play an integral role in maintaining the consistency, creativity and attention to detail that define our restaurant while contributing to the exciting future of the kitchen as we move into our newly developed culinary space.

Your responsibilities will include, but are not limited to:

  • Preparing, cooking and presenting dishes to the highest standard, ensuring every plate reflects the quality, creativity and consistency expected of a Two AA Rosette restaurant.
  • Taking ownership of your section, managing workflow, mise en place and service while working collaboratively with the wider kitchen brigade.
  • Ensuring every dish leaving your section meets our exacting standards for flavour, presentation and consistency.
  • Maintaining exceptional standards of cleanliness, organisation and food safety, adhering to HACCP procedures and Pan Pacific London brand standards.
  • Monitoring stock levels, controlling wastage and ensuring ingredients are stored and rotated correctly.
  • Supporting the senior kitchen team by identifying operational improvements, reporting maintenance or equipment issues, and contributing to the continuous development of the kitchen.
  • Acting as a positive role model within the brigade, helping to develop junior chefs and fostering a culture of teamwork, learning and excellence.
