Chef de Partie | Tortilleria | Bermondsey, London
We are looking for a great Commis Chef to join Harts Group as part of our El Pastor Tortilleria kitchen team in Bermondsey, London
You’ll be part of a small team in the Tortilleria, working across both hot and cold sections and taking orders directly from guests. Alongside restaurant service, you’ll prepare takeaway and Deliveroo orders, helping us serve some of the best tacos in London, whether they’re enjoyed at the restaurant or delivered to our guests
El Pastor is a small group of Mexican taquerias in London, inspired by the decade the founders spent in Mexico City, running a cult nightclub and searching for the city’s best taco al pastor.
We pour our hearts into top quality authentic produce, making fresh tortillas daily using heritage corn and working directly with suppliers and cooperative farmers in Mexico. We are proud to have been awarded a Star by the Sustainable Restaurant Association.
This ethos is felt by our teams, they understand the journey of the ingredients and how important they are to the dishes they serve. El Pastor is deeply invested in sourcing the most wonderful mezcals and tequilas and making every day a fiesta.

The Chef de Partie Role
- Previous experience as a Chef de Partie or strong Commis Chef in a high-volume, fast-paced kitchen
- Strong preparation and cooking skills, with the ability to confidently run and organise a kitchen section
- Good knife skills, including accurate and consistent vegetable preparation
- Experience working across hot and cold sections, with a good understanding of mise en place, batch cooking and preparation based on covers
- Experience with filleting and butchery is desirable
- Confident cooking during busy service while maintaining quality, consistency and pace
- Comfortable working in a guest-facing kitchen, taking orders and communicating with guests
- Experience with takeaway or delivery orders is desirable, with an understanding of maintaining the same high standards for food going out for delivery
- Good knowledge of ingredients, allergens, food labelling, FIFO and Food Safety standards
- Experience training and supporting Commis Chefs, helping them develop their skills and confidence
- Able to organise your section, manage your mise en place and communicate any shortages or issues to the senior kitchen team
- Good awareness of stock, food waste and production requirements
- Positive and kind attitude, with a strong team ethic and respect for colleagues
- Good command of English language
