Company Description

James Street South Restaurant, part of the James St. family, brings together the best of Belfast’s renowned James Street South Restaurant and The Bar and Grill at James St. The menu combines refined, contemporary cooking with classic bistro dishes such as crab and chilli linguine, Dundrum crab on toast, farmhouse terrine, and fruit de mer plates. A charcoal grill sits at the heart of the kitchen, showcasing prime Northern Irish steaks, whole fish, pork, and seasonal vegetables. The bar offers an extensive wine list, a curated selection of spirits and whiskies, and highlights locally produced beers, ciders, and gins. Team members join a respected restaurant focused on high-quality ingredients, excellent service, and a welcoming dining experience.

Role Description

The Chef De Partie will manage a designated section of the kitchen, ensuring consistent preparation, cooking, and presentation of dishes to James Street South standards. Day-to-day responsibilities include:

The role involves collaborating with the Head Chef and Sous Chefs, training and guiding junior team members, and contributing to menu development and specials when required. This is a full-time, on-site role based in Belfast, requiring flexibility to work evenings, weekends, and holidays as part of a rotating schedule.

Qualifications

  • Strong skills in food preparation and cooking across grill, fish, meat, and vegetable sections, with attention to detail and consistency.
  • Proficiency in kitchen operations, including mise en place, stock rotation, and maintaining a clean, organized workstation.
  • Knowledge of food safety, hygiene regulations, and best practices, with relevant certifications or willingness to obtain them.
  • Experience in high-quality bistro or fine dining environments, ideally with familiarity in modern European and grill-focused cuisine.
  • Ability to work effectively under pressure, manage time during busy services, and adapt to changing service needs.
  • Collaborative mindset with strong communication skills and the ability to support and mentor junior kitchen team members.
  • Passion for seasonal ingredients, local produce, and continuous learning in culinary techniques and presentation.
  • Formal culinary training or equivalent professional kitchen experience is highly desirable.
