Chef de Partie – The Dining Room at Seaham Hall

Location: Seaham Hall, County Durham

Salary: Up to £34,000 depending on experience, plus share of service charge (approx. £2,000 per annum for full-time employees)

Hours: 40 hours per week over 4 days, including weekends and bank holidays

Now, we’re looking for an exceptional Chef de Partie to join our talented team in The Dining Room — our restaurant that showcases the very best of seasonal, locally sourced produce.

The Role

As a Chef de Partie, you’ll take ownership of your section, ensuring every plate reflects our culinary excellence. Working closely with the Head Chef and the wider kitchen team, you’ll be responsible for the preparation, cooking, and presentation of dishes, maintaining consistency and creativity across every service.

This is a fantastic opportunity for an experienced Chef de Partie looking to step into a senior position — or for a talented Demi Chef de Partie ready to take the next step in their career.

Key Responsibilities

  • Prepare, cook, and present dishes within your designated section to the highest standards
  • Ensure consistency, quality, and attention to detail in every dish
  • Monitor portion sizes and waste control to maintain profit margins
  • Assist with stock control, rotation, and ordering
  • Uphold the highest standards of food hygiene, safety, and kitchen cleanliness
  • Support and inspire junior chefs within the team

What We’re Looking For

  • Previous experience as a Chef de Partie or strong Demi Chef de Partie ready to progress
  • Passion for seasonal, locally inspired cuisine
  • Excellent teamwork and communication skills
  • Ability to thrive under pressure in a dynamic kitchen environment
  • Strong organisational and time management abilities
  • NVQ Level 2 or equivalent in Professional Cookery (desirable)
  • Must provide own knives
