Mission

As a Chef de Partie, you will be responsible for managing your designated kitchen section, ensuring the preparation, quality, and presentation of dishes consistently meet Meliá's culinary standards. You will support the Executive Chef and Sous Chefs in delivering exceptional dining experiences while maintaining the highest standards of food safety, hygiene, organisation, and operational efficiency.

Key Responsibilities – Operational Excellence

  • Lead your assigned kitchen section, ensuring food is prepared and presented to the highest quality standards.
  • Supervise daily mise en place, portion control, food quality, and consistency in line with recipes and brand standards.
  • Monitor food stock, minimise waste, and ensure effective stock rotation (FIFO).
  • Maintain excellent hygiene, cleanliness, and HACCP standards throughout your section.
  • Support smooth kitchen operations during service while meeting production timelines and guest expectations.
  • Prepare daily requisitions and communicate stock requirements to senior chefs.
  • Assist in creating seasonal menus, daily specials, and culinary recommendations.
  • Train, support, and guide Commis Chefs and junior kitchen team members.
  • Ensure all kitchen equipment is used safely and maintained correctly.
  • Work collaboratively with all hotel departments to deliver an exceptional guest experience.

What we're looking for

  • Minimum 2 years' experience as a Chef de Partie or in a similar role within a 4 or 5-star hotel or high-volume quality restaurant.
  • Professional culinary qualification or recognised cooking certification.
  • Strong knowledge of food safety, HACCP, hygiene, and food handling regulations.
  • Excellent understanding of food preparation techniques, presentation, and quality standards.
  • Experience supervising and supporting junior kitchen team members.
  • Ability to remain calm and organised in a fast-paced service environment.
  • Strong communication skills with a collaborative and team-focused approach.
  • Passion for delivering exceptional guest experiences through outstanding food quality.
  • Good organisational skills with the ability to manage multiple priorities.
  • Proficiency in spoken English and eligibility to work in the UK.
