About the Role

We are currently looking for a Chef de Partie to join our culinary team behind our award-winning Road Hole Restaurant. The Road Hole Restaurant offers refined dining with spectacular views over the world-famous Old Course and West Sands Beach.

As Chef de Partie, you will take ownership of your section within our 3 AA Rosette kitchen, delivering exceptional food quality, consistency and presentation whilst supporting the development of junior chefs. Working alongside a talented team, you will play a key role in creating memorable dining experiences for our guests and maintaining the high standards expected within a luxury resort environment.

In this role you will:

  • Take ownership of the day-to-day operation of your assigned kitchen section.
  • Prepare and cook dishes to the standards set by the Executive and Sous Chefs.
  • Ensure all mise en place is completed to the required standard before service.
  • Maintain exceptional standards of quality, presentation and portion control.
  • Supervise, support and develop Demi Chef de Parties, Commis Chefs and apprentices.
  • Assist with stock control, ordering and stock rotation procedures.
  • Help achieve food cost targets through careful ordering and waste management.
  • Ensure full compliance with HACCP, food safety and allergen regulations.
  • Work collaboratively with kitchen and front of house teams to deliver seamless service.
  • Promote a positive, professional and safety-focused working environment.

To be successful in this role you will have the following qualities and experience:

  • Previous experience as a Chef de Partie or an experienced Demi Chef de Partie within a quality hotel or restaurant.
  • Sound knowledge of classical and modern cookery techniques.
  • Strong understanding of food hygiene, HACCP and allergen legislation.
  • Excellent organisation and time management skills.
  • Strong communication and leadership abilities.
  • Ability to perform calmly under pressure during busy service periods.
  • Flexible approach to working hours, including evenings, weekends and public holidays.
  • Passion for delivering exceptional food within a luxury hospitality environment.
  • High standards, attention to detail and a positive, professional attitude.

Permanent Full Time, 40hrs over 5 days

Salary

£31,769.40 per annum + tronc
Overtime available as per the needs of the business paid at £15.27 per hour
