Chef de Partie – Lobby Kitchen Brigade

The Peninsula Hotels are delighted to announce we are seeking a Chef de Partie to join our Lobby kitchen brigade, reporting directly to the Head Chef.

About the Role

This critical position ensures the success of our guest experience, delivering a quality menu with high standards of service within our prestigious Lobby. Our hotels are renowned for their luxurious environment, featuring live music and superior food and beverage service, expectations that are synonymous with our global brand.

Key Responsibilities

  • Assist the Sous Chef in all aspects of day-to-day kitchen operations, including high-volume service delivery
  • Lead a team to produce dish excellence using premium ingredients, adhering to menu guidelines while staying flexible for special requests
  • Supervise, train, and mentor junior chefs, including Apprentices, fostering professional development
  • Oversee kitchen cleanliness, hygiene, and safety, ensuring HACCP compliance
  • Maintain mise en place, equipment functionality, and high-quality food delivery for guests

Key Qualifications & Requirements

  • 3+ years of experience in a fast-paced hotel or restaurant kitchen, ideally with team management
  • Deep knowledge and creativity in culinary techniques and ingredients
  • Recognised culinary certifications (e.g., Maastricht Final, medium/supervisory level) strongly preferred
  • Strong leadership and ability to guide diverse teams with confidence
  • Adaptable, resilient, and personable, thriving under pressured environments
