About the location
Set in the heart of the City, overlooking Tower Bridge and the Tower of London, Tower Bridge is the starting point for discovering London’s historic past, alongside its exhilarating present. As impressive inside as out, this famous five-star hotel remains the centre of attention, as a new chapter begins in its history. This beautiful grade II listed building and former HQ of the Port of London Authority has 100 rooms, 41 residential apartments of which 31 units are in a FS run transient rental program, a stunning ballroom which has hosted the inaugural Reception of the United Nations, 5 meeting rooms, a stunning destination spa with 8 treatment rooms, hammam, steam, sauna and swimming and vitality pool, and a fantastic Food and Beverage offering including Cooper's Cut (Modern Steakhouse), Mei Ume (Chinese/ Japanese cuisine) and Rotunda (all day dining, afternoon tea & bar)

Four Seasons Hotel London at Tower Bridge is seeking a Commis Waiter or Waitress to join the team at Mei Ume.
About Mei Ume
Mei Ume brings together the traditions of Chinese and Japanese cuisine under one roof. The menu showcases exceptional sushi, sashimi, dim sum, and signature dishes, creating a vibrant and sophisticated dining experience in the heart of the City.
Led by Head Chef Tony Truong and his team, Mei Ume combines creativity, craftsmanship, and exceptional ingredients to deliver memorable guest experiences every day.
The role
As a Commis Waiter or Waitress, you will support the restaurant team in delivering exceptional service throughout every stage of the guest journey.
Working closely with the Chef de Rang and senior service team, you will assist with the preparation and maintenance of the restaurant, support service delivery, and ensure every guest receives the attentive and personalised hospitality for which Four Seasons is renowned.
What you will do
- Assist with setting up and preparing the restaurant before service
- Support the team by delivering food, beverages, and guest requests promptly and professionally
- Maintain cleanliness and organisation of your station and all service areas
- Prepare mise en place and ensure service stations are fully stocked
- Work closely with the kitchen team to ensure smooth communication before, during, and after service
- Ensure food is delivered accurately, efficiently, and to the highest standards
- Anticipate guest needs and respond with care and attention to detail
- Develop knowledge of menus, ingredients, beverages, and service standards
- Support the delivery of Four Seasons service standards at all times
What we are looking for
- Previous experience as a Commis Waiter, Commis Waitress, or within a hospitality environment is beneficial
- A genuine passion for hospitality and guest service
- Strong communication and teamwork skills
- Excellent attention to detail
- Ability to work effectively in a fast paced environment
- Positive attitude and willingness to learn
- Good spoken and written English
- Right to Work in the UK
What to expect
- Full time position based on a 40 hour working week
- Typically 2 to 3 split shifts per week, with the remaining shifts scheduled as single service shifts
- Single shifts are typically: 10.30am to 5.00pm or 5.00pm to close
- Split shifts are typically: 10.30am to 3.30pm and 5.30pm to 10.30pm
- Flexibility required across lunch and dinner service, weekends, and public holidays
