THE ROLE

At Nobu Hotel London Portman Square, every exceptional guest experience is supported by strong financial controls behind the scenes. As Cost Controller, you will play a key role in monitoring food, beverage and general stock costs across the business, ensuring robust controls, accurate reporting and effective processes that support operational and commercial success.

Working closely with Finance, Purchasing, Culinary and operational teams, you will provide valuable analysis and insight, helping the hotel maximise profitability while maintaining the highest standards.

You will

  • Monitor food, beverage and general purchasing activity, ensuring stock control systems are used accurately and effectively
  • Analyse gross profit performance and identify opportunities to improve margins and reduce waste
  • Review and maintain stock control procedures, carrying out audits and investigating discrepancies
  • Prepare daily food and beverage cost reports and support month-end inventory processes
  • Work closely with the kitchen team to ensure menus, recipes and promotions are accurately costed
  • Support cost analysis for events, banquets and special projects across the hotel
  • Manage purchasing and stock systems, maintaining accurate records and supplier information
  • Build strong relationships with managers and suppliers to support operational efficiency and commercial success
  • Ensure compliance with company policies, financial controls and industry standards
  • Attend Finance and hotel meetings, supporting reporting and continuous improvement initiatives
  • Identify opportunities to improve accuracy, efficiency and cost control across the business
  • Demonstrate a proactive, collaborative approach while embodying Nobu values of Family, Crafted, Smile and Kokoro

What We're Looking For

You have previous experience in cost control, finance, purchasing or stock management, within hospitality and food & beverage. You are analytical, detail-oriented and confident working with financial data, systems and reporting.

You enjoy collaborating with operational teams, building strong relationships and identifying opportunities to improve performance. Organised and proactive, you take pride in delivering accurate information that supports effective decision-making and commercial success.
