Development Chef – Freelance, with a pathway to full-time
Lumière Consultancy | London | £30/hr | c. 10 to 20 hrs per week depending on schedule & project status.
Lumière is a boutique hospitality consultancy working with restaurants, hotel F&B, airport lounges and luxury retail dining across the UK, Europe, Africa and the Middle East. We take concepts from brief to launch and beyond along with menu development, new product and LTO creation, recipe costing, kitchen set-up and team training.
We're looking for a Development Chef who wants more than a freelance booking. We want someone who will own culinary workstreams, shape how we work, and grow into a full-time role as the business grows.
What you'll do
- Lead menu and new product development from concept and tasting through to final spec, across several client projects at once
- Build recipe cards, costings and allergen matrices to a consistent Lumière standard
- Run testing cycles and tastings with client teams, and present your work confidently to senior stakeholders
- Support kitchen set-up, soft launches and team training on site
- Help build our internal recipe library, SOPs and development process, so the work improves every time

Who you are
- An experienced chef with a strong development or R&D background in premium, high-volume or multi-site settings
- Commercially minded: you think about cost, consistency and operational reality, not just the presentation.
- Organised and reliable, able to manage deadlines across projects with little supervision
- Comfortable in front of clients, and happy to carry a project
- Genuinely interested in consultancy and in helping build a growing business

The terms
- Freelance to start, £30/hr, averaging around 10 to 20 hours a week (some weeks busier, depending on project cycles)
- A clear intention to move to a full-time role for the right person, reviewed after an initial period
- A mix of studio, client-site and remote work
- Variety: no two projects are alike
