Nobu Hotel London Portman Square is seeking an exceptional Director of Food & Beverage to lead our diverse Food & Beverage operation.

This is an opportunity to join the Executive Committee of a globally recognised brand and shape the strategic direction of the operation encompassing the Nobu Restaurant & Bar, Kitchens, Lounge, Breakfast, In-Room Dining and Meetings & Events. The Role

Reporting directly to the General Manager, the Director of Food & Beverage is responsible for the strategic leadership, commercial performance and operational excellence of all Food & Beverage outlets and services within the hotel.

You will oversee a broad and dynamic outlet portfolio, ensuring exceptional service delivery, strong financial performance and industry-leading guest experiences. As a member of the Executive Committee, you will help shape the future direction of the hotel while maintaining Nobu's reputation as an acclaimed culinary destination.


What You'll Be Doing

  • Providing strategic and operational leadership across all Food & Beverage departments
  • Contributing to the overall strategic direction of the hotel as a member of the Executive Committee
  • Developing and implementing innovative Food & Beverage strategies that drive guest satisfaction and revenue growth
  • Leading and inspiring a large multi-department team to consistently deliver exceptional service standards
  • Driving commercial performance through revenue optimisation, strategic promotions and business development initiatives
  • Managing budgets, forecasts and financial performance while controlling food, beverage and labour costs
  • Partnering closely with the Executive Chef to deliver industry-leading culinary experiences and menu innovation
  • Overseeing Meetings & Events operations, ensuring flawless execution and exceptional client experiences
  • Building strong relationships with Sales, Marketing, Revenue and Operations teams to maximise business opportunities
  • Championing guest feedback initiatives and implementing continuous improvement strategies
  • Recruiting, developing and mentoring future leaders through coaching, training and succession planning
  • Embedding a culture of accountability, engagement and high performance
  • Ensuring compliance with all health & safety, food safety and licensing regulations
  • Supporting sustainability and responsible sourcing initiatives across the division
  • Monitoring KPIs and implementing action plans to continuously improve operational and financial performance
  • Acting as an ambassador for Nobu's values of Family, Crafted, Smile and Kokoro

What We're Looking For

We're seeking an inspirational hospitality leader with a proven track record of delivering commercial success, operational excellence and exceptional guest experiences within

  • Significant senior Food & Beverage leadership experience within a luxury hotel or premium hospitality environment
  • Experience managing multiple outlets and large operational teams
  • Strong commercial acumen with responsibility for budgets, forecasting and financial performance
  • A passion for exceptional guest experiences and service excellence
  • Proven experience leading, developing and inspiring high-performing teams
  • Strong strategic planning and change management capabilities
  • Outstanding communication and stakeholder management skills
  • Experience working closely with culinary teams to drive innovation and operational excellence
  • A hands-on leadership style combined with strong business acumen
  • The ability to thrive in a fast-paced, luxury hospitality environment
