Company Description

You will be joining Pesky as our Master Blockman during a period of enormous growth for our company. Our goal is to use seafood consumption to drive the restoration of fish stocks and the marine environments - doing so by creating the most incredible experiences for people to eat British seafood in their homes. Above all, we are building the team with individuals who can grow with the business while providing them with incredible experiences within their jobs.

Role Description

1. Hand-Processing & Yield Execution

  • Core Processing: Perform clean, accurate hand-filleting, skinning, pin-boning, portioning, and trimming across a variety of roundfish, flatfish (turbot, brill, plaice), trout, and shellfish.
  • Yield Awareness: Follow established filleting and block-cutting techniques to minimise waste and maximize recovery yields on all raw fish species.
  • Quality Check: Perform preliminary checks on incoming fish for freshness, temperature, and presentation before processing, flagging any issues to the Master Blockman.

2. Production Support & Line Workflow

  • Daily Workflow: Work closely with the Master Blockman to ensure daily cutting targets, customer orders, and packing deadlines are met in full.
  • Skill Growth: Actively engage in knife-skills training, learning advanced block-cutting and high-yield techniques under the mentorship of senior filleters.
  • Packing & Dispatch: Support the packing station to ensure portioned fish is properly iced, vacuum-sealed, and packaged to hit daily cold-chain transport cut-offs.

3. Hygiene, Food Safety & Site Standards

  • HACCP & Cleanliness: Keep your cutting station, knives, blocks, and equipment immaculately clean throughout the shift in line with HACCP and site hygiene standards.
  • Cold-Chain Care: Adhere to strict temperature controls, ensuring fish is kept properly iced and chilled at all times during processing.
  • Basic Record-Keeping: Assist with logging processing weights, batch codes, and waste totals into internal tracking systems.

  • Commercial Seafood Baseline: 1–2 years of hands-on experience in a commercial fish processing unit, fishmongers, market, or prep kitchen.
  • Foundational Knife Skills: Proven ability to fillete and trim core round and flatfish species safely and neatly.
  • Knife Care & PPE: Understanding of basic knife sharpening/steeling, station hygiene, and strict adherence to wearing required PPE (chainmail gloves, aprons, safety boots).
  • Team Player: Strong work ethic with a desire to learn from senior filleters and advance your trade craft.

Desirable Qualifications:

  • Level 2 Award in Food Safety for Manufacturing (or willingness to achieve it).
  • Basic understanding of temperature controls and food hygiene principles.
  • Valid UK Driving License
