Are you an experienced Fish Filletery who takes pride in precision, quality and working with exceptional produce?

Join Shoal Seafood, one of the UK’s fastest-growing fish and seafood wholesalers. We supply high-quality, sustainably sourced products to some of the UK’s leading 5-star restaurants and hotels, where quality really matters.

As our business continues to grow, we’re looking for an experienced Fish Filletery to join our team in Waltham Cross.

This is an opportunity to put your knife skills and seafood expertise to work in a fast-paced environment, preparing premium products to exact customer specifications.

What you’ll be doing

  • Preparing fish to precise customer specifications, including boning, filleting, cutting, and trimming.
  • Using your knife skills to produce consistently high-quality cuts with minimal wastage.
  • Working in a chilled production environment while maintaining excellent food safety and hygiene standards.
  • Following HACCP, temperature controls, Health & Safety, and internal food preparation procedures.
  • Maintaining a clean and organised workstation to minimise the risk of contamination.
  • Ensuring products meet our quality, technical, and customer standards.
  • Supporting quality control checks throughout the production process.
  • Maintaining a strong pace of work while ensuring accuracy and attention to detail.
  • Working collaboratively with the wider production team to meet daily requirements.

What we’re looking for

  • At least 2 years’ experience in a fish filleting role.
  • Strong and confident knife skills.
  • Good knowledge of different fish and preparation cuts.
  • A strong understanding of food safety and hygiene standards.
  • Excellent attention to detail and pride in the quality of your work.
  • Good organisation, planning, and time management skills.
  • The ability to work effectively as part of a team in a fast-paced environment.
  • A flexible approach to working hours when required.
