Our story

Back in 2019 in Paris, two friends, Charles and Victor, opened a brasserie together - the kind of place Parisians disappear into for a 3 hour lunch.

They called it La Nouvelle Garde: a promise to eat and drink the French way, done properly, 100% homemade, cooked from scratch from the highest quality seasonal ingredients.

They served classic French dishes prepared with care, generosity and excellence in beautiful, relaxed spaces full of energy.

Guests loved it!

So they opened another one, and then another one. And 9 brasseries later, it was finally time to bring it to London.

In July 2026 in Sloan Square, Brasserie Olivia was born.

This is just the beginning of our London story, and we'd love you to help write the next chapter.

The role

As a Floor Manager, you'll lead every shift ensuring exceptional service from the moment guests arrive until the last table leaves.

You’ll work closely with the Assistant General Manager and General Manager, and oversee the day-to-day front of house operation.

You’ll lead and support the team during service ensuring smooth collaboration between the FOH and the kitchen.

You'll set the standard through your organisation, communication and attention to detail, ensuring every guest enjoys an outstanding experience.

What Success Looks Like

  • You'll ensure the restaurant is fully prepared for service, with opening and closing duties completed to the highest standard.
  • You'll deliver an exceptional guest experience by building strong relationships with guests and confidently resolving any issues that arise.
  • You'll organise and lead shifts ensuring seamless communication between the front of house and kitchen teams throughout service.
  • You'll coach, develop and support your team, helping build a confident, engaged and high-performing restaurant.
  • You'll maintain exceptional service, cleanliness and operational standards throughout every shift.
  • You'll support recruitment by coordinating trial shifts and identifying candidates who will strengthen the team.
  • You'll drive commercial performance by maximising bookings, average spend per guest and every opportunity to enhance the guest experience.

What You'll Bring

  • You're already working as a Floor Manager, or you're an experienced Supervisor or Assistant Manager ready for the next step.
  • You're confident leading busy services while keeping your team organised, motivated and focused.
  • You have excellent knowledge of restaurant operations, guest service and front of house standards.
  • You're a natural leader who enjoys coaching people, giving feedback and helping others develop.
  • You're calm under pressure, make confident decisions and know how to resolve guest concerns professionally.
  • You lead by example, communicate clearly and take pride in delivering exceptional hospitality.
