Food and Beverage Manager – Elysium St Mawes
A new chapter in luxury hospitality is coming to St Mawes. This exciting new hotel will bring 56 beautifully designed bedrooms, a vibrant café, and a relaxing spa experience to one of Cornwall’s most sought-after coastal destinations.
As Food & Beverage Manager, you’ll lead the day-to-day operation across our restaurant, bar, café and in-room dining, making sure every guest receives warm, attentive and memorable service.
This is a hands-on role for someone who enjoys being visible on the floor, leading a team, developing people and creating a great atmosphere for both guests and colleagues.
What you will be doing
- Leading the day-to-day Food & Beverage operation across the restaurant, bar, café and in-room dining.
- Creating a consistently warm, relaxed and professional guest experience.
- Leading from the floor and supporting the team during key service periods.
- Recruiting, training, motivating and developing the Food & Beverage team.
- Managing rotas and staffing levels in line with business needs and payroll budgets.
- Working closely with the Head Chef to ensure smooth communication between front and back of house.
- Monitoring revenue, stock, costs, wastage and departmental performance.
- Identifying opportunities to increase revenue and improve the guest experience.
- Handling guest feedback confidently and positively.
- Maintaining excellent standards of presentation, cleanliness and organisation.
- Ensuring food safety, allergen, licensing and health & safety requirements are followed.

What we are looking for
You’ll be a natural host and an experienced Food & Beverage leader who genuinely enjoys creating great guest experiences.
You’ll ideally have:
- Previous Food & Beverage management experience within a hotel, restaurant or quality hospitality environment.
- Strong restaurant and bar operational experience.
- Experience leading, motivating and developing a team.
- Good commercial awareness, including payroll, stock control and departmental costs.
- Strong communication and organisational skills.
- Confidence handling guest feedback and resolving issues.
- A calm, proactive and solutions-focused approach.
- Strong attention to detail.
- A flexible approach to working evenings, weekends and bank holidays.
- Experience within a boutique, luxury or lifestyle hotel would be an advantage, as would previous pre-opening experience.
