About the Role
As Food & Beverage Manager at Theatre Royal & Royal Concert Hall, Nottingham, you’ll play a key role in one of the city’s most exciting entertainment venues. You’ll lead the hospitality operation across The Yarn Bar, foyer and concession bars, cellar and wider catering services, delivering outstanding customer experiences while driving sales, commercial performance and operational excellence.
You’ll lead, inspire and develop a passionate team, creating a high-performing culture where great service and great results go hand in hand. Working closely with the General Manager, you’ll have the opportunity to shape and grow the F&B operation, maximise revenue, improve efficiency and bring new ideas to life across a busy programme of shows and events. This is a hands-on, high-energy role where no two days are the same—and where your leadership can make a real impact.
The Venue
Situated in the heart of Nottingham, the Theatre Royal and Royal Concert Hall is one of our liveliest and most vibrant venues, hosting incredible shows, performances and events regularly—from West End Musicals to Comedy to Concerts to Opera—the venue hosts it all!
Legends Global plays an important role in the venue’s hospitality operations, managing The Yarn Bar and a range of concession and foyer bars across the building. Our teams provide guests with high-quality food and beverage service before performances, during intervals and throughout events, helping to create a welcoming and enjoyable experience for every visitor.

Key Responsibilities
- Support the senior team with F&B budgets, P&L, sales targets, and commercial performance.
- Drive sales and revenue across The Yarn Bar, events, foyer, and concession bars.
- Lead, motivate, and develop the F&B team, maintaining high standards of service and Legends Global values.
- Support the planning and delivery of F&B operations across all events.
- Deliver and maintain excellent bar, wine, and cocktail service in line with SOPs.
- Manage stock ordering, deliveries, storage, and cellar operations, minimizing waste and loss.
- Ensure compliance with Health & Safety, Food Safety, licensing, and company standards.
- Support recruitment, training, and development of permanent and casual team members.
- Identify opportunities to improve efficiency, service, and commercial performance.
- Maintain clear communication, accurate reporting, and strong teamwork across the venue.
We Are Looking For Someone With
- Previous experience managing and leading a team within a high-profile, fast-paced hospitality or entertainment venue.
- Commercially focused, with experience supporting budgets, stock management, and driving sales.
- Excellent leadership, communication, negotiation, and customer service skills.
- Strong attention to detail with good IT skills, including Excel, EPOS, and stock management systems.
- A positive, “can-do” attitude with a commitment to delivering the highest standards.
- A collaborative team player who thrives in a high-achieving environment.
- Flexibility and comfort working and commuting during unsociable hours.
