Food & Beverage Manager - Eden Locke, Edinburgh
We are looking for a Food & Beverage Manager to join the team at Eden Locke, Edinburgh.
Our F&B space is at the heart of the hotel. By day, it is a relaxed coffee shop serving our guests, local community and visitors. As the day moves on, it transforms into a welcoming wine and cocktail bar.
We are looking for someone who enjoys being hands on, leading from the front and working closely with their team. You will play a key role in shaping the F&B experience while working closely with the hotel team to create a seamless experience for our guests.
About The Job
As F&B Manager, you will be responsible for the day to day operation and overall performance of our F&B offering.
This is a hands on role. You will be on the floor, working alongside your team, supporting service, speaking with guests and making sure everything runs smoothly. You will also take ownership of the commercial side of the operation, including budgets, stock, costs and profitability.
You will work closely with the wider hotel team, supporting events, activations and the overall guest experience. We are a collaborative environment, so communication and teamwork are a big part of the role.

What You'll Be Doing
- Lead the F&B team from the front, setting the standard for service and guest experience.
- Oversee the daily operation of the coffee shop and evening wine and cocktail bar.
- Create a welcoming, relaxed and memorable experience for our guests and customers.
- Coach, support and develop the team, creating a positive and collaborative working environment.
- Manage rotas, time and attendance, training and team performance.
- Take ownership of F&B budgets, costs and profitability, identifying opportunities to improve performance.
- Manage stock levels, ordering and inventory while maintaining quality and controlling costs.
- Monitor guest feedback and use it to continuously improve our service and offering.
- Handle guest issues and complaints confidently, finding positive and practical solutions.
- Work closely with Reception, Operations and other hotel teams to ensure a seamless guest experience.
- Support events, activations and lifestyle programming.
- Ensure the F&B space is clean, inviting and always reflects the Eden Locke brand.
- Ensure all health and safety, licensing, legal and company requirements are followed.

What We're Looking For
We are looking for someone who is passionate about hospitality, confident leading a team and comfortable getting stuck in.
You Will Ideally Have
- Previous experience managing a Food & Beverage operation or a similar hospitality environment.
- A genuine passion for food, drinks and creating great guest experiences.
- Good knowledge of wine, spirits and cocktails.
- Strong commercial awareness and an understanding of budgets, costs and profitability.
- Experience managing, coaching and developing a team.
- Excellent communication and people skills.
- A practical, organised and solution focused approach.
- Confidence using POS, stock management and other hospitality systems.
Most importantly, you will be someone who leads by example, enjoys working with people and is not afraid to get stuck in wherever needed.
