What You'll Be Doing
Food and Beverage Operations Manager, you will be responsible for supporting the successful onsite execution of food and beverage operations across Nteractive’s live events.
This is a delivery-focused role, taking agreed F&B plans and translating them into effective onsite operations. Working closely with the F&B Manager or project F&B Lead, you will review operational plans ahead of deployment, identify potential delivery challenges and ensure the right resources, staffing, and processes are in place for successful execution.
Once onsite, you will take responsibility for the day-to-day operational delivery of assigned F&B areas and functions, coordinating venue, catering, supplier, and Nteractive teams to ensure agreed plans are delivered safely, efficiently, and to the required service and quality standards.
The role requires a strong operational mindset, excellent attention to detail, and the confidence to make practical decisions in a fast-moving live event environment.
Pre-Event Operational Preparation
- Work with Senior F&B Leadership to coordinate F&B resourcing,
- Ensuring additional team members are briefed and supplied with the required information ahead of going site.
- Work with F&B leadership in order to ensure all contracting requirements for additional Freelance resources.
- Supporting F&B Leadership with arrangement for team flight and accommodation where required.
- Review agreed F&B plans ahead of onsite deployment to gain a full understanding of the event, service requirements, expected attendance, operational standards, and key deliverables.
- Review F&B placement, space requirements, and delivery plans for assigned catering experiences, identifying potential operational challenges and recommending practical adjustments where required.
- Review draft floor plans and build structures from an operational perspective, ensuring layouts support effective catering delivery, guest flow, service access, replenishment, and back-of-house requirements.
- Review exhibitor and ancillary F&B requirements and associated deliverables to ensure they can be effectively executed onsite.
- Review proposed catering guarantees and attendance projections for assigned functions, understanding the rationale behind planned numbers and highlighting potential operational concerns to the F&B Manager or project lead.
- Develop and/or review onsite F&B staffing plans, ensuring appropriate staffing levels, roles, and responsibilities are in place to support successful delivery.
- Familiarize yourself with event documentation, schedules, floor plans, function sheets, menus, dietary requirements, and operational procedures prior to arriving onsite.
- Participate in pre-event operational handovers and briefings to ensure a clear understanding of the agreed F&B strategy and delivery plan.

Onsite Event Delivery
- Take operational responsibility for the setup and delivery of assigned F&B functions and catering areas, ensuring they are delivered in accordance with agreed plans.
- Conduct pre-service inspections of F&B spaces, reviewing room setup, presentation, cleanliness, signage, service points, equipment, and operational readiness.
- Monitor service standards, food quality, presentation, replenishment, and guest experience throughout each service period.
- Coordinate closely with venue catering teams, suppliers, and Nteractive colleagues to ensure effective communication and smooth operational delivery.
- Lead and brief Nteractive, freelance, and operational staff allocated to assigned F&B functions, ensuring everyone understands their responsibilities, service standards, and escalation routes.
- Act as a visible operational point of contact onsite, proactively identifying potential issues and implementing practical solutions before they impact the attendee or client experience.
- Ensure F&B spaces are operationally ready ahead of advertised service times and effectively managed throughout setup, live service, and breakdown.
- Oversee the setup and delivery of exhibitor and ancillary F&B requirements, ensuring agreed service levels and quality standards are achieved.
- Work collaboratively with other event departments including Logistics, Production, Technical, Registration, and Client Services where F&B delivery interfaces with wider event operations.
Attendance, Guarantees & Financial Control
- Monitor attendance and actual consumption across assigned catering functions.
- Track actual numbers against agreed guarantees and advise the F&B Manager/project lead and client where onsite guarantee adjustments should be considered.
- Maintain accurate records of catering actuals and operational data required for post-event reporting.
- Review banquet checks and onsite catering charges against agreed orders, guarantees, and the relevant client F&B template.
- Identify and escalate any discrepancies or variances before charges are approved.
- Manage onsite F&B additions and changes within the agreed approval process.
- Ensure appropriate client authorization is obtained before committing to additional onsite expenditure.
- Maintain clear records of all approved additions and changes to support accurate budget reconciliation following the event.
Post-Event Reporting
- Support the collection and recording of final catering actuals across monitored F&B functions, including main attendee catering, cafés, executive meals, and other agreed areas.
- Work with F&B Manager/project lead with a clear operational handover following the event, including final actuals, operational challenges, service issues, and recommended improvements.
- Capture operational learnings that can improve future delivery, including observations relating to attendee flow, staffing, service levels, guarantees, consumption, and venue performance.
- Ensure all required event documentation and operational records are completed accurately and returned following the event.

Skills / Experience
In this role you should have the following experience:
- Experience working within live events, catering, hospitality, conference operations, or a comparable operational environment.
- Experience coordinating or supervising onsite catering, hospitality, or event operations.
- Experience leading operational teams and providing clear day-to-day direction and support.
- Strong understanding of catering operations including function setup, service delivery, staffing, food presentation, and guest experience.
- Ability to read and interpret event documentation including floor plans, function sheets, catering orders, and operational schedules.
- Experience monitoring attendance, consumption, or operational data during live events.
- Good financial awareness with the ability to review charges, identify discrepancies, and understand the impact of onsite additions.
- A track record of delivering high-quality, customer-focused services.
- Experience working with venues, caterers, and external suppliers.
- Experience working on large-scale or international events is desirable but not essential.
- Good Excel and general ICT skills.
- Catering, hospitality, or event management qualifications are desirable but not essential.

Other Requirements
- A willingness and ability to undertake regular UK and international travel throughout the calendar year.
- Flexibility to work evenings, weekends, and extended onsite hours as required by live event schedules.
- Ability to work effectively away from home for extended periods during event delivery.
- Travel requirements 45-50% of working time.
- Commitment to Nteractive's health and safety policies and all relevant venue, food safety, and operational requirements.
- Quiet home environment from which to work (although the successful candidate may be required to be office based and have the ability to travel to the office to aid team collaboration or meet client needs).
- Minimum of 25MB download and 2MB upload speed for home broadband capacity to meet Nteractive homeworking business requirements.
