General Manager
On Site - Cambridge

This role is quite literally in your hands — well, the burger is.

As General Manager, you're the custodian of what makes Byron, Byron: a properly British burger, served with less fuss and more substance. You lead your restaurant with the confidence to do things properly, and the wit to never take yourself too seriously.

We built this brand on obsession — with doing things right, first, and better. Your job is to bring that obsession to life for every guest who walks through the door, and to make sure nobody ever leaves hungry.

Know Your Stuff

You know Byron's food offering inside out, and you wear that knowledge properly — confident enough to answer any question from a customer or a colleague, and generous enough to keep training your team every time the menu moves.

You know each burger build like the back of your hand, and you recommend dishes to guests with the same easy confidence you'll train your team to have.

  • Labour Forecasting — build a rota that puts the right people in the right place at the right time.
  • Sales Forecasting — accurately forecast sales up to three weeks out, reading historic trend alongside current run rate.
  • A full understanding of profit and loss (P&L), and how to use it to improve profitability.
  • Order the correct food and beverage against your sales forecast, preventing stockouts and reducing wastage.
  • Ensure your team are properly trained and remain 100% compliant.
  • A working understanding of local marketing, and how to put it to use in your restaurant.
  • Ensure your restaurant holds all statutory certificates.
  • A full understanding of restaurant maintenance, including its urgency and its cost.
  • Proactively manage with due diligence — covering management controls, documentation, food hygiene, allergens, and food alert audits — and adhere to all health and safety and food safety policies and procedures.
  • Responsible for maintaining operating systems (Food Alert, FLOW, HARRI, FOURTH, EHO, Alert65).
  • You are the life and soul of compliance, making sure your team always exhibits best practice.
