Location: Central London (West End)
Launch: Early 2027 (looking for someone to start ASAP)
Salary: £55-70k (DOE) + Tronc/Bonus (Discretionary)

An established, high-end hospitality group is opening its next site in Central London, a premium all-day dining brasserie, and is seeking an exceptional General Manager to lead it from the ground up ahead of launch at the start of next year.

This is a genuine leadership role for someone who thinks and operates like an owner. You'll take full accountability for the business, commercial performance, operational excellence, guest experience, and profitability, leading a team of approximately 40–50 across a fast-paced, high-volume, high-end operation.

Responsibilities:

  • Full P&L ownership, with direct accountability for revenue, profitability, EBITDA, and cost control
  • Lead the pre-opening build: recruiting, training, and building the team; establishing systems, standards, and culture from day one
  • Drive commercial growth through local business development, partnerships, events, digital channels, and customer acquisition
  • Own budgeting, forecasting, KPI management, and reporting directly to ownership
  • Lead recruitment, training, coaching, and succession planning to build a high-performing team with low turnover
  • Oversee food and beverage operations, procurement, labour scheduling, inventory, quality assurance, and compliance
  • Be visible and hands-on — leading from the floor, not the office

What we're looking for:

  • A proven leadership background in internationally recognised five-star hotels, luxury restaurants, or premium hospitality groups
  • A track record of full P&L ownership with measurable commercial results
  • Experience leading teams of 40–50+ in a high-end, high-volume environment
  • A hands-on operator with exceptional attention to detail and a genuine passion for guest experience
  • Strong financial acumen - confident with budgets, forecasts, and management reporting
  • A natural people leader who builds high-performing, low-turnover teams
  • The right to work in the UK
